Blanda runt och h\u00e4ll upp p\u00e5 en pl\u00e5t. St\u00e4ll potatisklyftorna upp och st\u00e4ll in pl\u00e5ten i ugnen som du v\u00e4rmt till 200 grader. Torka av fiskfil\u00e9erna och sk\u00e4r dem i lagom stora bitar. Det brukar vara l\u00e4mpligt att dela varje fil\u00e9 i tv\u00e5 delar. Doppa dem f\u00f6rst i r\u00e5gmj\u00f6let, d\u00e4refter i \u00e4ggvispet och sist i pankostr\u00f6br\u00f6det s\u00e5 de t\u00e4cks helt av ett fint lager panering. Det h\u00e4r kallas dubbelpanering och ger ett mycket bra saftigt resultat. Hetta upp oljan i t.ex. en gjutj\u00e4rnsgryta p\u00e5 ganska h\u00f6g v\u00e4rme. Du kan testa om oljan har bra temperatur genom att l\u00e4gga i en liten bit panerad fisk och se att det fr\u00e4ser till och blir gyllene efter ett tag utan att br\u00e4nnas. Om det inte fr\u00e4ser till \u00e4r oljan inte tillr\u00e4ckligt het och d\u00e5 blir paneringen bara flottig och mjuk. N\u00e4r oljan \u00e4r tillr\u00e4ckligt het sugs inte s\u00e5 mycket olja upp och du f\u00e5r ett krispigare resultat. V\u00e4nd fisken n\u00e4r den f\u00e5tt fin f\u00e4rg, stek klart p\u00e5 andra sidan, lyft upp och l\u00e5t rinna av p\u00e5 en tallrik med dubbel- eller trippelvikt hush\u00e5llspapper.
