Ringla lite olivolja \u00f6ver. St\u00e4ll formen \u00e5t sidan tills det \u00e4r ca 20 minuter kvar till servering. D\u00e5 st\u00e4ller du in den i ugnen som du v\u00e4rmt till 150 grader. Pressa lite citronsaft \u00f6ver eller h\u00e4ll f\u00f6rsiktigt vin \u00f6ver och runtom innan du st\u00e4ller in laxen i ugnen. Ha g\u00e4rna en termometer i en av laxbitarna och st\u00e4ll den p\u00e5 40 grader s\u00e5 f\u00e5r du den perfekt stekt.<\/p>\n<p>Koka r\u00f6dbetorna i saltat vatten, de brukar kunna ta ganska l\u00e5ng tid f\u00f6r att bli genomkokta, ca 30-40 minuter beroende p\u00e5 storlek och hur f\u00e4rska de \u00e4r. H\u00e4ll av vattnet n\u00e4r du tycker de \u00e4r lagom mjuka.<\/p>\n<p>Koka \u00e4ven potatisarna i saltat vatten i ca 20 minuter.<\/p>\n<p>Under tiden som r\u00f6dbetor och potatis kokar sm\u00e4lter du ner purjol\u00f6ken i sm\u00f6r och olja p\u00e5 ganska l\u00e5g v\u00e4rme, den f\u00e5r inte bli stekt f\u00f6r d\u00e5 blir den torr och tr\u00e5kig men n\u00e4r den sm\u00e4lts blir den mj\u00e4ll och delikat. H\u00e4ll p\u00e5 vinet efter ett tag och l\u00e5t puttra ihop. Den som vill kan \u00e4ven tills\u00e4tta lite gr\u00e4dde, men jag tycker det \u00e4r \u00f6verfl\u00f6digt n\u00e4r man serverar hollandaises\u00e5s till.<\/p>\n<p>Stek tomaterna med rosmarin, salt och peppar i olivolja f\u00f6rst p\u00e5 den kupiga sidan tills de mjuknat och sedan p\u00e5 snittytan med \u00f6rterna.<\/p>\n<p>G\u00f6r \u00f6rthollandaisen enligt receptet h\u00e4r intill, st\u00e4ll i ljum-varmt vattenbad till servering.<\/p>\n<p>L\u00e4gg upp lax med dina gr\u00f6nsaker och s\u00e5sen p\u00e5 fat.
