Lyft svampen ur pannan och l\u00e4gg p\u00e5 ett fat medan du steker l\u00f6ken p\u00e5 medell\u00e5g v\u00e4rme i sm\u00f6r tills den \u00e4r helt mjuk men inte tagit f\u00e4rg. Tills\u00e4tt svampen, krydda med salt och peppar. H\u00e4ll p\u00e5 vin eller sherry, l\u00e5t puttra ihop, tills\u00e4tt ev. gr\u00e4dden och l\u00e5t puttra lite till. N\u00e4r pastan \u00e4r f\u00e4rdigkokt al dente, med en k\u00e4rna av tuggmotst\u00e5nd h\u00e4ller du av den i ett durkslag, sk\u00f6ljer den helt kort i kallt vatten f\u00f6r att avstanna kokningen och h\u00e4ller sedan pastan i svamppannan. R\u00f6r runt s\u00e5 att all pasta f\u00e5r svamps\u00e5s p\u00e5 sig. L\u00e4gg upp p\u00e5 tallrikar, toppa med salladsl\u00f6k, parmesan och persilja.
