Caponata inneh\u00e5ller oftast aubergine, d\u00e4rtill tomat, vitl\u00f6k, l\u00f6k, olivolja och en skv\u00e4tt vin\u00e4ger. Den har \u00e4ven ofta svarta oliver och ibland kapris som ytterligare smaks\u00e4ttning. Caponata passar utm\u00e4rkt till otroligt mycket &#8211; du kan anv\u00e4nda den som tillbeh\u00f6r till k\u00f6tt, fisk eller kyckling eller \u00e4ta den som den \u00e4r med med ris, bulgur, couscous eller quinoa, kanske med fetaost. Den \u00e4r utm\u00e4rkt som pastas\u00e5s eller som en f\u00f6rr\u00e4tt typ tapas med ett gott br\u00f6d att doppa i den. Den kan \u00e4ven anv\u00e4ndas till att fylla en omelett. Tills\u00e4tt auberginerna, l\u00e5t fr\u00e4sa med ett tag innan du h\u00e4ller p\u00e5 tomater, vitt vin, chili, socker, tomatpur\u00e9 och kryddor. F\u00e4rska \u00f6rtkryddor tills\u00e4tter du p\u00e5 slutet av tillagningen medan torra kryddor \u00e4r bra att tills\u00e4tta tidigt. L\u00e5t puttra under lock tills auberginen mjuknat helt, det tar sin tid men blir riktigt gott och mustigt. Smaka av kryddningen och tills\u00e4tt vin\u00e4gern. Smaka av igen.
