Men jag har l\u00e4rt mig en del knep och tips fr\u00e5n Ulrika Davidsson ur hennes utm\u00e4rkta kokbok med glutenfria recept; Baka glutenfritt med Ulrika (Bonnier Fakta). Bland annat ska man t\u00e4nka p\u00e5 att degen ska vara v\u00e4ldigt l\u00f6s j\u00e4mf\u00f6rt med sedvanligt glutenhaltiga degar. Dessutom kan man g\u00e4rna tills\u00e4tta fiberhusk som en slags gluteners\u00e4ttare eftersom det l\u00e4tt blir smuligt utan gluten medan fiberhusket ger viskositet med sina gel\u00e9artade egenskaper. Och s\u00e5 ska degen g\u00f6ras p\u00e5 kallt degspad och j\u00e4sa bara en g\u00e5ng men d\u00e5 extra l\u00e4nge. Blanda ner f\u00f6rst fiberhusken under omr\u00f6rning, d\u00e4refter de \u00f6vriga mj\u00f6lsorterna. Anv\u00e4nd g\u00e4rna degkrokar eller hush\u00e5llsassistent f\u00f6r att blanda degen v\u00e4l i n\u00e5gra minuter. L\u00e5t degen j\u00e4sa v\u00e4l \u00f6vert\u00e4ckt p\u00e5 dragfri plats i en timme. Stj\u00e4lp upp degen, forma baguetter och l\u00e4gg p\u00e5 en pl\u00e5t, t\u00e4ck dem med rikligt med bovetemj\u00f6l eller durramj\u00f6l, ev. blandat med lite flingsalt f\u00f6r extra god effekt. Sk\u00e4r snitt i dem med en vass kniv och t\u00e4ck dem med en k\u00f6kshandduk. L\u00e5t dem j\u00e4sa en timme. Gr\u00e4dda dem i ugn som du f\u00f6rv\u00e4rmt till 250 grader i ca 30 minuter.
