En riktigt god paj som du kan servera b\u00e5de vid festligare och mer vardagliga tillf\u00e4llen.&nbsp;<\/strong><\/p>\n<p>En Shepherd&#8217;s Pie g\u00f6rs utan pajdeg, men den som vill kan sj\u00e4lvklart g\u00f6ra en pajdeg, inspirerat av Steak- and Kidney Pie.&nbsp;V\u00e4lj en vanlig eller en glutenfri pajdeg &#8211; du finner bra recept h\u00e4r p\u00e5 Katinkas Kitchen genom att s\u00f6ka i s\u00f6krutan uppe till h\u00f6ger p\u00e5 just &#8221;pajdeg&#8221;.<\/p>\n<p>Det h\u00e4r \u00e4r ju ett av de experiment jag gillar att bedriva i mitt k\u00f6k, varav en del blir mer lyckade och andra mindre lyckade. Faktum \u00e4r att pumpapur\u00e9n h\u00e4r h\u00f6ll p\u00e5 att misslyckas helt, eftersom jag k\u00f6pt hel fel sorts pumpa &#8211; en spaghettipumpa i st\u00e4llet f\u00f6r vanlig eller butternutpumpa. L\u00e5t pumpan baka tills den \u00e4r helt mjuk, ca 40 minuter. Gr\u00f6p ur k\u00e4rnorna och sl\u00e4ng dem eller spara dem f\u00f6r att rosta dem. Fr\u00e4s schalottenl\u00f6ken i en rej\u00e4l klick sm\u00f6r p\u00e5 medell\u00e5g v\u00e4rme s\u00e5 den blir helt mjuk men inte tar f\u00e4rg. L\u00e5t pur\u00e9n st\u00e5 p\u00e5 l\u00e5g v\u00e4rme s\u00e5 den h\u00e5ller sig varm men inte br\u00e4nns vid. R\u00f6r ev. ner en \u00e4ggula i slutet f\u00f6r att f\u00e5 fastare konsistens vid gratineringen.<\/p>\n<p><em>K\u00f6ttfyllningen:&nbsp;<\/em><\/p>\n<p>Stek l\u00f6ken i egen stekpanna p\u00e5 medell\u00e5g v\u00e4rme i en blandning av sm\u00f6r och olivolja tills den blivit mjuk och glansig utan att ta f\u00f6r mycket f\u00e4rg. Tills\u00e4tt vitl\u00f6ken och mor\u00f6tter och stek ett tag till. Tills\u00e4tt f\u00e4rsen, h\u00f6j v\u00e4rmen och fr\u00e4s s\u00e5 att f\u00e4rsen blir smulig. Tills\u00e4tt kryddorna, lagerblad, tomatpur\u00e9 och Worchester sauce. Tills\u00e4tt \u00e4ven buljongen och torkad svamp och l\u00e5t puttra ihop s\u00e5 att smakerna blandas och det blir en fyllig fyllning d\u00e4r v\u00e4tskan kokat in ganska ordentligt samtidigt som l\u00f6k och mor\u00f6tter blivit helt mjuka. Har du valt att anv\u00e4nda f\u00e4rsk eller fryst svamp steker du den i egen stekpanna f\u00f6rst utan fett tills v\u00e4tskan dunstat och d\u00e4refter med en klick sm\u00f6r. Sedan tills\u00e4tter du den stekta svampen efter buljongen.<\/p>\n<p><em>Montering:&nbsp;<\/em><\/p>\n<p>Sm\u00f6rj en ugnsfast form eller pajform med sm\u00f6r. H\u00e4ll i k\u00f6ttfyllningen. Bred pumpapur\u00e9n \u00f6ver. S\u00e5 h\u00e4r l\u00e5ngt g\u00e5r det utm\u00e4rkt att f\u00f6rbereda f\u00f6r att sedan f\u00f6rvara formen i kylen och senare gr\u00e4dda den strax f\u00f6re servering. St\u00e4ll in i ugnen och gratinera tills pumpapur\u00e9n b\u00f6rjat f\u00e5 lite f\u00e4rg. Servera direkt med en sallad, kokta b\u00f6nor eller broccoli eller p\u00e5 engelskt vis med kokta \u00e4rtor.
