L\u00e5t pumpan baka tills den \u00e4r helt mjuk, skuren i bitar tar det ca 20-30 minuter. Fr\u00e4s schalottenl\u00f6ken i en rej\u00e4l klick sm\u00f6r p\u00e5 medell\u00e5g v\u00e4rme s\u00e5 den blir helt mjuk men inte tar f\u00e4rg. Tills\u00e4tt eventuellt lite vatten eller buljong om pur\u00e9n \u00e4r f\u00f6r fast, den ska vara som en s\u00e5s h\u00e4r f\u00f6r att kunna &#8221;nappera&#8221; \u00e4ggen p\u00e5 k\u00f6ksfranska. L\u00e5t pur\u00e9n st\u00e5 p\u00e5 l\u00e5g v\u00e4rme s\u00e5 den h\u00e5ller sig varm men inte br\u00e4nns vid.<\/p>\n<p>Stek vitl\u00f6ken i olja och sm\u00f6r p\u00e5 medell\u00e5g v\u00e4rme s\u00e5 den blir mjuk utan att ta f\u00e4rg. \u00d6ka v\u00e4rmen lite p\u00e5 slutet, l\u00e4gg i den sk\u00f6ljda spenaten och dra ner v\u00e4rmen igen. V\u00e4nd runt spenaten s\u00e5 den &#8221;vissnar&#8221; en aning. Salta och peppra och st\u00e4ll \u00e5t sidan.<\/p>\n<p>V\u00e4rm upp vatten i en kastrull, tills\u00e4tt vin\u00e4ger och salt &#8211; ca 1 msk vin\u00e4ger och 1 tsk salt per liter vatten. Se till att vattnet precis \u00e4r p\u00e5 kokgr\u00e4nsen s\u00e5 det inte stormkokar men heller inte \u00e4r f\u00f6r svalt. Kn\u00e4ck ner ett eller tv\u00e5 \u00e4gg i taget i det heta vattnet. v\u00e4nta lite och &#8221;\u00f6s&#8221; sedan \u00e4ggvitan med en sked \u00f6ver \u00e4ggulemitten. L\u00e5t \u00e4ggen sjuda tills du ser att vitan stelnat men du ber\u00e4knar att gulan fortfarande \u00e4r l\u00f6s. Lyft f\u00f6rsiktigt upp \u00e4ggen med en h\u00e5lslev, l\u00e5t rinna av helt kort p\u00e5 hush\u00e5llspapper eller k\u00f6kshandduk. L\u00e4gg upp spenaten p\u00e5 v\u00e4rmda fat, l\u00e4gg p\u00e5 de pocherade \u00e4ggen och t\u00e4ck dem med pumpapur\u00e9n.
