K\u00f6r ihop ingredienserna till en grynig massa. Tills\u00e4tt det iskalla vattnet genom det lilla r\u00f6ret, medan maskinen fortfarande g\u00e5r. L\u00e5t degen forts\u00e4tta k\u00f6ra tills den g\u00e5r ihop till en klump i ena \u00e4ndan av bunken. <a href=\"http:\/\/files.katinkaskitchen.com\/2015\/11\/IMG_4235.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-23707\" src=\"http:\/\/files.katinkaskitchen.com\/2015\/11\/IMG_4235-300x225.jpg\" alt=\"IMG_4235\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2015\/11\/IMG_4235-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2015\/11\/IMG_4235-150x113.jpg 150w, https:\/\/files.katinkaskitchen.com\/2015\/11\/IMG_4235.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Degen ska bli smidig men inte f\u00f6r kladdig och precis h\u00e5lla ihop men inte vara f\u00f6r smulig.&nbsp;St\u00e4ng d\u00e5 av maskinen och lyft ut degen. L\u00e4gg den&nbsp;i pajformen om du vill trycka ut den direkt eller vira in den i plastfolie och st\u00e4ll i kylen i en halvtimme.&nbsp;Om du som jag ofta har lite br\u00e5ttom och inte hinner v\u00e4nta p\u00e5 de ordentliga momenten trycker du ut den i pajformen och st\u00e4ller d\u00e4refter in hela pajformen i kylen i en halvtimme innan du gr\u00e4ddar pajbotten. Det \u00e4r viktigt f\u00f6r att den inte ledset ska halka ner fr\u00e5n kanterna under gr\u00e4ddningen.<\/p>\n<p>Gr\u00e4dda pajbotten i 200 grader i ca 15-20 minuter s\u00e5 det stelnar och b\u00f6rjar f\u00e5 fin f\u00e4rg men inte blir br\u00e4nt.&nbsp;Det ska vara vackert gyllene och frasigt m\u00f6rt.<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r med fyllningen:&nbsp;<\/strong><\/em><\/p>\n<p>Koka pumpabitarna med citron eller apelsin i vatten s\u00e5 att det t\u00e4cker pumpan i 20 minuter tills bitarna \u00e4r helt mjuka. H\u00e4ll av vattnet och st\u00e4ll att svalna. Mixa sedan pumpak\u00f6ttet sl\u00e4tt med en stavmixer. Tills\u00e4tt apelsinjuicen och mixa lite till.<\/p>\n<p>Vispa ihop \u00e4ggen med sockret, tills\u00e4tt apelsinskal och kryddorna. Blanda ihop \u00e4ggvispet med den mixxade pumpan och r\u00f6r ordentligt s\u00e5 att smeten blandas och blir helt homogen och sl\u00e4t. Fyll det f\u00f6rgr\u00e4ddade pajskalet med smeten och st\u00e4ll in i ugnen p\u00e5 175 grader att baka i ca 30 minuter tills fyllningen stannat, dvs stelnat. Testa med en sticka i mitten s\u00e5 att den inte \u00e4r l\u00f6s.
