Inspirationen kom fr\u00e5n en mycket god brynt sm\u00f6r-glass p\u00e5 Sannas trevliga restaurang vid \u00d6stermalmstorg. Jag utgick fr\u00e5n brynt sm\u00f6r och gick vidare och gjorde en butter scotch eller sm\u00f6rkola som det v\u00e4l heter p\u00e5 svenska. Spetsad med en aning havssalt blev det en mycket uppskattad glass, liknande den franska Beurre Sal\u00e9-glassen, som jag nog snart f\u00e5r g\u00f6ra igen. N\u00e4r sm\u00f6ret f\u00e5tt en fin gyllenbrun f\u00e4rg drar du kastrullen av v\u00e4rmen och l\u00e5ter den st\u00e5 alldeles stilla och svalna. D\u00e5 sjunker de br\u00e4nda mj\u00f6lkresterna ner till botten som du vill bli av med. H\u00e4ll upp det klarade brynta sm\u00f6ret i en annan tjockbottnad kastrull, se till att du inte f\u00e5r med n\u00e5got av de br\u00e4nda flagorna. Man kan anv\u00e4nda en finmaskig sil. Sl\u00e4ng de br\u00e4nda mj\u00f6lkresterna. I det klarade brynta sm\u00f6ret h\u00e4ller du socker, mj\u00f6lk och sirap samt salt. L\u00e5t sjuda under omr\u00f6rning tills det bubblar och blir kolalikt och doftar kola. Tag av v\u00e4rmen och l\u00e5t svalna. Blanda med gr\u00e4dden. Eventuellt beh\u00f6ver du anv\u00e4nda en stavmixer. L\u00e5t blandningen st\u00e5 svalt \u00e4nda tills det \u00e4r dags att g\u00f6ra glassen.
