Pressa eller krossa en vitl\u00f6ksklyfta och blanda den med n\u00e5gra msk olivolja. R\u00f6r \u00e4ven ner salt och g\u00e4rna vitpeppar som jag tycker passar v\u00e4ldigt bra till fisk. Pensla fisken med den smaksatta olivoljan s\u00e5 alla bitar \u00e4r ordentligt t\u00e4ckta av St\u00e4ll formen \u00e5t sidan tills det \u00e4r dags att baka fisken i ugn som du v\u00e4rmt till 100-150 grader tills den har en innertemperatur p\u00e5 40-42 grader. Det tar ca 20 minuter. Tills\u00e4tt den strimlade f\u00e4nk\u00e5len och forts\u00e4tt fr\u00e4sa tills f\u00e4nk\u00e5len mjuknat. Krydda med salt, peppar, \u00f6rter och ros\u00e9peppar p\u00e5 slutet. (om du har i ros\u00e9pepparn f\u00f6r tidigt tappar den bara sin fina f\u00e4rg). Tills\u00e4tt \u00e4ven en skv\u00e4tt vitt vin eller Noilly Prat, puttra ihop och tills\u00e4tt lite mer god olivolja precis innan servering.<\/p>\n<p><em>Majrovorona:&nbsp;<\/em><\/p>\n<p>Fr\u00e4s de t\u00e4rnade majrovorna i lite olja tills de \u00e4r mjuka, tills\u00e4tt tomater <a href=\"http:\/\/files.katinkaskitchen.com\/2015\/11\/IMG_4330.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-23868\" src=\"http:\/\/files.katinkaskitchen.com\/2015\/11\/IMG_4330-300x225.jpg\" alt=\"IMG_4330\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2015\/11\/IMG_4330-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2015\/11\/IMG_4330-150x113.jpg 150w, https:\/\/files.katinkaskitchen.com\/2015\/11\/IMG_4330.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>precis p\u00e5 slutet. Pressa i lite citron och krydda med salt och peppar.<\/p>\n<p><em>Sm\u00f6ret:&nbsp;<\/em><\/p>\n<p>Sm\u00e4lt sm\u00f6ret i en kastrull p\u00e5 medelh\u00f6g v\u00e4rme tills det b\u00f6rjar skumma och till slut blir gyllenbrunt. L\u00e5t de br\u00e4nda mj\u00f6lkresterna sjunka till botten och h\u00e4ll av sm\u00f6ret i en annan kastrull eller i en sk\u00e5l. Tills\u00e4tt citronskal och citronsaft. Smaka av och st\u00e4ll \u00e5t sidan p\u00e5 svag varmh\u00e5llning tills det \u00e4r dags att servera.<\/p>\n<p><em>Montering:&nbsp;<\/em><\/p>\n<p>L\u00e4gg upp en liten kulle f\u00e4nk\u00e5l i mitten p\u00e5 tallriken, toppa den med torskryggen. L\u00e4gg majrovor med tomat runtom och skeda citronsm\u00f6ret \u00f6ver.
