Jag gillar uttrycket och det h\u00e4r \u00e4r en garanterat lutfri och samtidigt otroligt god fiskr\u00e4tt. Det tar lite l\u00e4ngre tid \u00e4n man kan tro att koka gr\u00f6nk\u00e5len mjuk och om den inte \u00e4r helt mjuk blir det ingen len fin gr\u00f6nk\u00e5lsmousse. L\u00e4gg den kokta gr\u00f6nk\u00e5len i en mixer, tills\u00e4tt n\u00e5gon msk kokvatten, en <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-24620\" src=\"http:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_4740-225x300.jpg\" alt=\"IMG_4740\" width=\"225\" height=\"300\" srcset=\"https:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_4740-225x300.jpg 225w, https:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_4740-113x150.jpg 113w, https:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_4740.jpg 480w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/>rej\u00e4l klick sm\u00f6r och lite olivolja samt vitpeppar och \u00f6rtsalt. Mixa v\u00e4l, kolla s\u00e5 konsistensen \u00e4r bra och h\u00e4ll i en tjockbottnad kastrull som du l\u00e5ter st\u00e5 p\u00e5 l\u00e5g v\u00e4rme f\u00f6r v\u00e4rmeh\u00e5llning.<\/p>\n<p>Sm\u00e4lt sm\u00f6r och olivolja i en stekpanna med h\u00f6ga kanter eller en trakt\u00f6rpanna, kallas \u00e4ven sauteuse. H\u00e4ll i riset och l\u00e5t det steka med ett tag, tills\u00e4tt \u00e4ven saffranet precis innan du h\u00e4ller p\u00e5 vinet eller vermouthen. L\u00e5t puttra ihop lite innan du b\u00f6rjar h\u00e4lla en slev i taget av buljongen som du v\u00e4rmt upp i en kastrull vid sidan av. R\u00f6r hela tiden i risotton, se till att v\u00e4rmen \u00e4r medelh\u00f6g s\u00e5 det sm\u00e5puttrar utan att br\u00e4nnas vid och tills\u00e4tt n\u00e4sta slev f\u00f6rst n\u00e4r riset sugit upp det mesta av v\u00e4tskan. Forts\u00e4tt s\u00e5 tills riset \u00e4r ganska genomkokt men det ska p\u00e5 \u00e4ktitalienskt vis fortfarande ha en liten k\u00e4rna av al dente. T\u00e4nk p\u00e5 att n\u00e4r du tills\u00e4tter parmesanen tjocknar risotton s\u00e5 se till att den \u00e4r ganska l\u00f6s med hj\u00e4lp av buljong och vin innan du precis innan servering r\u00f6r ner parmesanen s\u00e5 du f\u00e5r en <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-24621\" src=\"http:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_4737-300x225.jpg\" alt=\"IMG_4737\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_4737-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_4737-150x113.jpg 150w, https:\/\/files.katinkaskitchen.com\/2015\/12\/IMG_4737.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>perfekt kr\u00e4mig risotto. Servera direkt med gr\u00f6nk\u00e5lspur\u00e9n och fisken som du stekt i sm\u00f6r och olja f\u00f6rst helt kort p\u00e5 k\u00f6ttsidan f\u00f6r att sedan v\u00e4nda den s\u00e5 att den steks f\u00e4rdigt p\u00e5 skinnsidan f\u00f6r att beh\u00e5lla sin saftighet.
