D\u00e4rf\u00f6r har jag mixat den med sm\u00f6rstekt schalottenl\u00f6k till en ljuvligt kr\u00e4mig pur\u00e9 som passar till b\u00e5de lax, vit fisk, kyckling, vilt s\u00e5som hjort, annat k\u00f6tt eller korv. N\u00e4r du ska mixa den s\u00e5 h\u00e4r \u00e4r det inte riktigt lika kinkigt som n\u00e4r du ska servera den kokt eller stekt. Hacka gr\u00f6nk\u00e5len i bitar. Koka den i saltat vatten tills den \u00e4r helt mjuk, det tar lite l\u00e4ngre tid \u00e4n man kan tro. Tills\u00e4tt \u00e4ven peppar och \u00f6rtsalt, citronsaft fr\u00e5n en halv citron och lite kokvatten och olivolja. Mixa tills du har en helt sl\u00e4t fin pur\u00e9 eller mousse. H\u00e4ll upp den i en kastrull, vispa ner lite mer sm\u00f6r om du vill. Smaka av s\u00e5 att kryddningen \u00e4r bra &#8211; beh\u00f6ver du mer citron, salt, \u00f6rtsalt, peppar, sm\u00f6r, olivolja?
