Jag hittade helt magiskt goda p\u00e5 Stockholms Matmarknad fr\u00e5n den lilla italienska \u00f6n Pantelleria &#8211; fulla med noter av viol och citron.<\/p>\n<p><em><strong>Du beh\u00f6ver f\u00f6r 4 personer:&nbsp;<\/strong><\/em><\/p>\n<p>1 stor p\u00e5se hackad gr\u00f6nk\u00e5l (400 gram)<\/p>\n<p>3-5 vitl\u00f6ksklyftor, skalade och skivade<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-24791\" src=\"http:\/\/files.katinkaskitchen.com\/2016\/01\/IMG_5139-300x225.jpg\" alt=\"IMG_5139\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2016\/01\/IMG_5139-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2016\/01\/IMG_5139-150x113.jpg 150w, https:\/\/files.katinkaskitchen.com\/2016\/01\/IMG_5139-768x576.jpg 768w, https:\/\/files.katinkaskitchen.com\/2016\/01\/IMG_5139-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>1-2 schalottenl\u00f6kar, skalade och hackade<\/p>\n<p>1 burk sardellfil\u00e9er (jag v\u00e4ljer helst dem inlagda i olivolja och anv\u00e4nder \u00e4ven den oljan f\u00f6r extra smak)<\/p>\n<p>olja att steka i<\/p>\n<p>nymald svartpeppar och \u00f6rtsalt<\/p>\n<p>det finrivna skalet och saften fr\u00e5n 2 citroner<\/p>\n<p>en rej\u00e4l n\u00e4ve kapris av s\u00e5 god kvalitet som m\u00f6jligt<\/p>\n<p>ca 2 dl riven parmesan<\/p>\n<p>pasta efter tycke och smak, jag tog glutenfria tagliatelle<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>B\u00f6rja med att f\u00f6rv\u00e4lla den hackade gr\u00f6nk\u00e5len som du rensat bort h\u00e5rda stj\u00e4lkar och bladskaft fr\u00e5n. N\u00e4r den \u00e4r mjuk h\u00e4ller du av den i ett durkslag. Fr\u00e4s l\u00f6k och schalottenl\u00f6k i olja p\u00e5 medell\u00e5g v\u00e4rme s\u00e5 den blir mjuk utan att ta f\u00e4rg. Tills\u00e4tt de hackade sardellfil\u00e9erna och oljan de l\u00e5g i, fr\u00e4s runt ett tag innan du h\u00e4ller p\u00e5 pressad citron. L\u00e5t puttra lite. Tills\u00e4tt gr\u00f6nk\u00e5len och kaprisen, riv citronskal \u00f6ver, salta och peppra. Koka under tiden pastan al dente, h\u00e4ll av i ett durkslag och v\u00e4nd ner den avrunna pastan i s\u00e5sen i pannan. V\u00e4nd \u00e4ven ner en del av parmesanen, spara n\u00e5got att toppa med vid serveringen. Blanda runt s\u00e5 all pasta f\u00e5r &#8221;s\u00e5s&#8221; p\u00e5 sig.
