Det var ocks\u00e5 den s\u00e5sen vi hade till ny\u00e5rsmiddagen och receptet p\u00e5 den har publicerats tidigare h\u00e4r p\u00e5 Katinkas Kitchen.&nbsp;<\/strong><strong>S\u00e5sen \u00e4r en stor favorit hos alla i familjen och faktiskt v\u00e4ldigt l\u00e4tt att g\u00f6ra. H\u00e4r fick den komplettera en stekt lax med ris och gr\u00f6na b\u00f6nor, haricots verts, till en god vardagsmiddag med lite lyxkant.&nbsp;<\/strong><\/p>\n<p>Om du g\u00f6r vermouths\u00e5sen till r\u00f6dtungeruladerna f\u00f6rst, s\u00e5 som jag gjorde, anv\u00e4nder du spadet fr\u00e5n den ugnsbakade fisken som bas. G\u00f6r du s\u00e5sen fr\u00e5n scratch nu kan du anv\u00e4nda fiskfond p\u00e5 flaska om du inte har en &#8221;hemlagad&#8221; fiskfond.<\/p>\n<p><em><strong>Du beh\u00f6ver till 4 personer:&nbsp;<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-24838\" src=\"http:\/\/files.katinkaskitchen.com\/2016\/01\/IMG_5253-300x225.jpg\" alt=\"IMG_5253\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2016\/01\/IMG_5253-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2016\/01\/IMG_5253-150x113.jpg 150w, https:\/\/files.katinkaskitchen.com\/2016\/01\/IMG_5253-768x576.jpg 768w, https:\/\/files.katinkaskitchen.com\/2016\/01\/IMG_5253-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/strong><\/em><\/p>\n<p>4 bitar lax<\/p>\n<p>dragon eller annan \u00f6rtkrydda<\/p>\n<p>salt och peppar<\/p>\n<p>sm\u00f6r eller en blandning av sm\u00f6r och olja att steka laxen i<\/p>\n<p>ris<\/p>\n<p>gr\u00f6na b\u00f6nor<\/p>\n<p><em>Till s\u00e5sen:&nbsp;<\/em><\/p>\n<p>2-3 msk fiskfond p\u00e5 flaska<\/p>\n<p>2 dl vatten<\/p>\n<p>1-2 dl vitt vin<\/p>\n<p>1 dl Noilly Prat<\/p>\n<p>2 dl gr\u00e4dde<\/p>\n<p>vitpeppar<\/p>\n<p>ev lite salt eller \u00f6rtsalt<\/p>\n<p>ca 2 tsk arrowrot<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>S\u00e4tt p\u00e5 riset och f\u00f6rbered en kastrull f\u00f6r att koka b\u00f6norna. Koka b\u00f6norna inf\u00f6r serveringen, frysta g\u00e5r s\u00e5 mycket fortare \u00e4n f\u00e4rska s\u00e5 ber\u00e4kna n\u00e4r du beh\u00f6ver dra ig\u00e5ng dina b\u00f6nor. Krydda laxen och st\u00e4ll den \u00e5t sidan tills det \u00e4r dags att steka den &#8221;\u00e0 la minute&#8221; inf\u00f6r serveringen. Blanda fiskfonden med vatten och vitt vin. L\u00e5t puttra ganska ordentligt s\u00e5 du reducerar ner det hela med en tredjedel. Tills\u00e4tt gr\u00e4dde och Noilly Prat samt lite vitpeppar. L\u00e5t puttra ihop \u00e4nnu mer s\u00e5 att s\u00e5sen tjocknar en aning och blir homogen. Smaka av s\u00e5 du tycker smakerna sitter &#8211; kanske mer av n\u00e5got? Red av s\u00e5sen med lite arrowrot utr\u00f6rt i lite av s\u00e5sen eller en sked vatten. L\u00e5t s\u00e5sen puttra upp s\u00e5 den tjocknar. Den ska inte Stek laxen gyllene p\u00e5 b\u00e5da sidor men s\u00e5 den fortfarande har en fr\u00e4sch k\u00e4rna f\u00f6r att inte blir torr och tr\u00e5kig vid servering. Servera direkt med ditt nykokta ris och kokta b\u00f6nor och s\u00e5sen.
