N\u00e4r resterna inte r\u00e4cker till alla g\u00e4ster \u00e4r det praktiskt att g\u00f6ra en pastas\u00e5s av dem. K\u00f6ttet strimlades och stektes med schalottenl\u00f6k, fick smak av sherry, svamp och tryffelcr\u00e8me, tryffelolja och tryffelsalt samt vitpeppar och lite k\u00f6rvel. Gr\u00e4dde redde av det hela tillsammans med kalvfond.&nbsp;Denna goda kalvpanna serverades med tagliatelle men skulle lika g\u00e4rna kunna serveras med ris. Gr\u00f6na \u00e4rtor till blev pricken \u00f6ver i.&nbsp;<\/strong><\/p>\n<p>Receptet \u00e4r f\u00f6r kalvpannan som pastas\u00e5s &#8211; vill du servera den med ris \u00f6kar du bara p\u00e5 m\u00e4ngden till ca 150 gram k\u00f6tt per person. Lyft upp k\u00f6ttet, tills\u00e4tt lite mer fett och stek l\u00f6ken p\u00e5 medell\u00e5g v\u00e4rme s\u00e5 den mjuknar utan att ta f\u00f6r mycket f\u00e4rg. Tills\u00e4tt sherryn, l\u00e5t puttra ett tag innan du tills\u00e4tter fonden, lite vatten och gr\u00e4dde. Krydda med dina tryffelprodukter, vitpeppar och k\u00f6rvel. L\u00e5t puttra s\u00e5 att du har en fin kr\u00e4mig s\u00e5s full av smaker. Ett tag innan servering l\u00e4gger du i k\u00f6ttet och l\u00e5ter det puttra med s\u00e5 det blir varmt och lagom genomstekt utan att bli torrt.
