Jag hade rester kvar fr\u00e5n en middag p\u00e5 prosciuttolindad skrei med citronstekt strimlad gr\u00f6nk\u00e5l, rostad blomk\u00e5l och brynt sm\u00f6r med kapris, ansjovis och citronskal fick ett helt annat stuk. Fisken \u00e5t vi upp men tillbeh\u00f6ren hade jag kvar av, framf\u00f6r allt den ljuvliga rostade blomk\u00e5len. Tills\u00e4tt dina gr\u00f6nsaksrester samt kaprissm\u00f6ret och v\u00e4rm upp. Dra upp v\u00e4rmen n\u00e5got. Vispa upp \u00e4ggen f\u00f6rsiktigt med en gaffel tillsammans med n\u00e5gra msk kallt vatten. T\u00e4nk p\u00e5 att inte vispa f\u00f6r h\u00e5rt s\u00e5 att \u00e4ggen sl\u00e5s s\u00f6nder f\u00f6r mycket, d\u00e5 blir det \u00e4ggr\u00f6ra i st\u00e4llet f\u00f6r omelett som ju ska h\u00e5lla ihop. H\u00e4ll \u00e4ggsmeten \u00f6ver gr\u00f6nsaksfr\u00e4set i pannan, dra ner v\u00e4rmen till l\u00e5g och lyft f\u00f6rsiktigt runt och i omeletten f\u00f6r att f\u00e5 \u00e4ggsmeten att rinna ner till botten och stelna. Om du har en stekpanna vars handtag t\u00e5l ugn kan du st\u00e4lla in den ett tag p\u00e5 ca 150 grader f\u00f6r att gr\u00e4ddas klart.
