Tomaterna konfiteras i ugnen eller i en kastrull p\u00e5 spisen i rikligt med olivolja som sedan f\u00e5r s\u00e4llskap av sardellfil\u00e9er, svarta oliver och kapris. Anv\u00e4nd helst den sortens kapris som \u00e4r inlagd i salt, ordentligt ursk\u00f6ljd \u00e4r den alldeles delikat med sina noter av citronskal och viol. Citron eller en skv\u00e4tt vitt vin blir tillsammans med spadet fr\u00e5n den ugnsbakade fisken och oljan den goda s\u00e5sen att doppa br\u00f6d i eller mosa ner kokt potatis i. Ugnen s\u00e4tter du p\u00e5 ca 175 grader. L\u00e4gg p\u00e5 tomaterna, oliver och kapris. Pressa \u00f6ver citron, h\u00e4ll g\u00e4rna p\u00e5 en skv\u00e4tt vitt vin och \u00f6s p\u00e5 av oljan som tomaterna bakats i. L\u00e4gg ocks\u00e5 vitl\u00f6ksklyftorna runt fisken eller l\u00e4gg dit nya klyftor. Salta och peppra och st\u00e4ll in i ugnen p\u00e5 ca 150 grader, g\u00e4rna med en termometer i en fiskbit. N\u00e4r innertemperaturen \u00e4r 42 grader tycker jag fisken \u00e4r bra, den som vill ha den lite mer fast l\u00e5ter den g\u00e5 till 45 grader.
