Du b\u00f6rjar med att rosta pumpan i ugnen, och det kan du \u00e4ven g\u00f6ra i f\u00f6rv\u00e4g. Sedan kokar du den helt snabbt, mixar och serverar! Den passar ocks\u00e5 bra som en liten f\u00f6rr\u00e4tt vid en st\u00f6rre middag, men jag serverade den med varma sm\u00f6rg\u00e5sar som v\u00e5r vanliga m\u00e5ndagssoppa.&nbsp;<\/strong><\/p>\n<p><em><strong>Du beh\u00f6ver f\u00f6r 4 personer:&nbsp;<\/strong><\/em><\/p>\n<p>2 butternut pumpa (eller om det heter squash &#8211; b\u00e5da namnen f\u00f6rekommer)<\/p>\n<p>olivolja<\/p>\n<p>1 f\u00e4rsk chili, hackad<\/p>\n<p>salt och peppar<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-25340\" src=\"http:\/\/files.katinkaskitchen.com\/2016\/05\/IMG_5649-300x225.jpg\" alt=\"IMG_5649\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2016\/05\/IMG_5649-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2016\/05\/IMG_5649-150x113.jpg 150w, https:\/\/files.katinkaskitchen.com\/2016\/05\/IMG_5649-768x576.jpg 768w, https:\/\/files.katinkaskitchen.com\/2016\/05\/IMG_5649-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>1,4 liter vatten<\/p>\n<p>2-3 buljongt\u00e4rningar &#8211; jag tar ekologisk buljong utan glutamat<\/p>\n<p>2-3 stj\u00e4lkar citrongr\u00e4s<\/p>\n<p>ca 3 sm f\u00e4rsk ingef\u00e4ra, skalad<\/p>\n<p>2-4 vitl\u00f6ksklyftor, skalade och delade p\u00e5 l\u00e4ngden<\/p>\n<p>2-3 pressade limefrukter eller 1-2 citroner<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-25341\" src=\"http:\/\/files.katinkaskitchen.com\/2016\/05\/IMG_5652-225x300.jpg\" alt=\"IMG_5652\" width=\"225\" height=\"300\" srcset=\"https:\/\/files.katinkaskitchen.com\/2016\/05\/IMG_5652-225x300.jpg 225w, https:\/\/files.katinkaskitchen.com\/2016\/05\/IMG_5652-113x150.jpg 113w, https:\/\/files.katinkaskitchen.com\/2016\/05\/IMG_5652-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>Dela pumpan i halvor eller kvartar p\u00e5 l\u00e4ngden och l\u00e4gg dem p\u00e5 en pl\u00e5t t\u00e4ckt med bakpl\u00e5tspapper. Ringla lite olivolja \u00f6ver, str\u00f6 \u00f6ver salt och peppar. St\u00e4ll in dem i ugnen att bakas p\u00e5 175-200 grader i ca 30 minuter tills k\u00f6ttet \u00e4r helt mjukt men inte blivit br\u00e4nt.<\/p>\n<p>Gr\u00f6p ur pumpak\u00f6ttet och l\u00e4gg i en kastrull med vatten som du kokat upp med buljongt\u00e4rningarna. &nbsp;Sk\u00e4r av det nedersta h\u00e5rda och det \u00f6versta lite torra och spretiga p\u00e5 citrongr\u00e4set och dela dem p\u00e5 l\u00e4ngden. Banka g\u00e4rna p\u00e5 dem med knivskaftet f\u00f6r att frig\u00f6ra smakerna. L\u00e4gg citrongr\u00e4set i buljongen med ingef\u00e4ran skuren i skivor, h\u00e4lften av chilin och vitl\u00f6ken. L\u00e5t koka ca 10-15 minuter. Lyft upp citrongr\u00e4sstj\u00e4lkarna och mixa resten till en sl\u00e4t kr\u00e4mig soppa. Tills\u00e4tt den pressade limejuicen eller citronsaften och smaka av ifall du beh\u00f6ver mer chili eller salt. \u00c4r soppan f\u00f6r tjock tills\u00e4tter du lite mer vatten.
