Den finns p\u00e5 m\u00e5nga restauranger och g\u00f6rs i princip alltid v\u00e4ldigt bra. Den \u00e4r ytterligare ett exempel p\u00e5 enkelheten i den italienska matlagningen. Kalvschnitzeln som det h\u00e4r r\u00f6r sig om doppas hastigt i mj\u00f6l (jag v\u00e4ljer glutenfritt) och steks hastigt s\u00e5 den f\u00e5r fin stekyta men fortfarande \u00e4r saftig och fin. S\u00e5sen best\u00e5r av stekjuicen och pressad citron samt en aning buljong av god kvalitet. Citronerna hemma \u00e4r ju inte som de solmogna italienska, men jag har hittat ekologiska italienska tomater som numera finns p\u00e5 m\u00e5nga aff\u00e4rer i Sverige, till exempel hos MatHem och p\u00e5 Coop, som ger fin fyllig s\u00f6t smak. Servera med en sallad eller p\u00e5 italienskt vis med n\u00e5gon gr\u00f6nsak s\u00e5som gr\u00f6na b\u00f6nor, stekt radicchiosallad, fr\u00e4st mangold eller spenat. Ett kallt ros\u00e9vin eller n\u00e5got kylt r\u00f6dvin passar bra till.<\/strong><\/p>\n<p>P\u00e5 bilderna \u00e4r r\u00e4tten verkligen inte s\u00e4rskilt fotog\u00e9nique, men jag lovar att det \u00e4r riktigt gott! H\u00e4r serverades den med vitl\u00f6ksfr\u00e4st f\u00e4rsk mangold. Ta fram k\u00f6ttet s\u00e5 det \u00e4r rumstempererat n\u00e4r du b\u00f6rjar. T\u00e4nk p\u00e5 att tunna skivor g\u00e5r mycket fort att steka och det \u00e4r verkligt trist med torrt tr\u00e5kigt k\u00f6tt. Stek inte mer k\u00f6tt samtidigt i stekpannan \u00e4n att du har max tv\u00e5 tredjedelar av pannan t\u00e4ckt av k\u00f6ttet. Detta f\u00f6r att pannan ska kunna h\u00e5lla den h\u00f6ga temperaturen. L\u00e4gg \u00f6ver de f\u00e4rdigstekta k\u00f6ttskivorna p\u00e5 ett varmt uppl\u00e4ggningsfat. Skrapa lite i pannan s\u00e5 du f\u00e5r loss k\u00f6ttsafterna, h\u00e4ll i citron och buljong och r\u00f6r eller vispa samman s\u00e5 du f\u00e5r en fin sky med v\u00e4l balanserad smak i syra och s\u00e4lta och umami.
