F\u00f6lj receptet p\u00e5 ramsl\u00f6kspesto som finns h\u00e4r p\u00e5 Katinkas Kitchen &#8211; s\u00f6k i s\u00f6krutan uppe till h\u00f6ger. Detta \u00e4r gl\u00e4djande nog, som<br \/>\ns\u00e5 mycket annat, n\u00e5got vi faktiskt hittar i de flesta aff\u00e4rer nuf\u00f6rtiden. Konsum har en riktigt bra ekologisk i sitt \u00c4nglamarksortiment. Man kan \u00e4ven g\u00e5 till en bra ostaff\u00e4r eller n\u00e5gon som s\u00e4ljer italienska delikatesser. Den ska vara v\u00e4llagrad, smulig men med en viss saftighet. Smaka!<\/p>\n<p><em><strong>Du beh\u00f6ver:&nbsp;<\/strong><\/em><\/p>\n<p>1 liter gr\u00f6nsaksbuljong<\/p>\n<p>1 gul l\u00f6k eller 2-3 shalottenl\u00f6kar, finhackade<\/p>\n<p>5 msk olivolja<\/p>\n<p>300 gram risottoris (typ avorio eller carnaroli \u2013 finns numera i de flesta aff\u00e4rer)<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-10262\" src=\"http:\/\/files.katinkaskitchen.com\/2012\/05\/sparrisrisotto-1-Katinkas-Kitchen-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2012\/05\/sparrisrisotto-1-Katinkas-Kitchen-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2012\/05\/sparrisrisotto-1-Katinkas-Kitchen-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2012\/05\/sparrisrisotto-1-Katinkas-Kitchen-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>2 dl vitt vin<\/p>\n<p>ca 3 msk ramsl\u00f6kspesto (smaka av s\u00e5 du f\u00e5r bra m\u00e4ngd)<\/p>\n<p>150 gram nyriven parmesan av god kvalitet (inte f\u00e4rdigriven p\u00e5 p\u00e5se!)<\/p>\n<p>ev. salt och peppar<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>Koka upp buljongen i en egen kastrull &#8211; koka vattnet, l\u00e4gg i buljongt\u00e4rningarna och l\u00e5t sjuda under omr\u00f6rning s\u00e5 buljongen l\u00f6ser sig helt i vattnet. L\u00e5t den sedan st\u00e5 p\u00e5 l\u00e5g v\u00e4rme och ta fram en slev att \u00f6sa med.<\/p>\n<p>Tag fram en tjockbottnad kastrull eller gryta till risotton och fr\u00e4s l\u00f6ken i olivoljan p\u00e5 medell\u00e5g v\u00e4rme.&nbsp;&nbsp;<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-25515\" src=\"http:\/\/files.katinkaskitchen.com\/2016\/08\/IMG_7621-300x300.jpg\" alt=\"IMG_7621\" width=\"300\" height=\"300\" srcset=\"https:\/\/files.katinkaskitchen.com\/2016\/08\/IMG_7621-300x300.jpg 300w, https:\/\/files.katinkaskitchen.com\/2016\/08\/IMG_7621-150x150.jpg 150w, https:\/\/files.katinkaskitchen.com\/2016\/08\/IMG_7621-768x768.jpg 768w, https:\/\/files.katinkaskitchen.com\/2016\/08\/IMG_7621-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>Fr\u00e4s under omr\u00f6rning i ca 10-15 minuter och passa s\u00e5 den inte blir brun. Tills\u00e4tt riset, h\u00f6j v\u00e4rmen en aning och r\u00f6r ordentligt s\u00e5 varje riskorn blir t\u00e4ckt av fett. H\u00e4ll i vinet och l\u00e5t puttra ihop n\u00e5gra minuter. Ta en s\u00e5sslev och \u00f6s i en slev i taget av den varma buljongen under omr\u00f6rning. Se till att v\u00e4tskan absorberats n\u00e4stan helt innan du tills\u00e4tter n\u00e4sta slev. Tills\u00e4tt en slev buljong i taget och r\u00f6r i riset tills det absorberats innan du h\u00e4ller i n\u00e4sta slev buljong. Forts\u00e4tt s\u00e5 tills grynen blivit mjuka men fortfarande har en liten h\u00e5rd k\u00e4rna \u2013 italienarna vill ha sin risotto, liksom sin pasta,&nbsp;<em>al dente.&nbsp;<\/em>N\u00e4r risotton har kokat klart och \u00e4r kr\u00e4mig tills\u00e4tter du ramsl\u00f6kspeston&nbsp;och r\u00f6r om och r\u00f6r d\u00e4refter ner parmesanen. Smaks\u00e4tt med peppar och eventuellt salt \u2013 salt brukar inte beh\u00f6vas n\u00e4r man anv\u00e4nder buljong, eftersom den ofta \u00e4r ganska salt redan och osten ger \u00e4n mer s\u00e4lta och i det h\u00e4r fallet ger \u00e4ven peston en aning s\u00e4lta.
