Du kan v\u00e4lja en mildare smaks\u00e4ttning med bara citron &#8211; jag anv\u00e4nde min emulsion till en r\u00e5djurssadel och ville ha den l\u00e4tt r\u00f6kiga smaken med viss hetta som komplement till min r\u00e4tt. <\/strong><\/p>\n<p><strong>En emulsion \u00e4r helt enkelt att tv\u00e5 egentligen of\u00f6renliga saker som olja och v\u00e4tska sm\u00e4lter ihop och blir kr\u00e4migt och fint, vilket sker med hj\u00e4lp av emulgator s\u00e5som dijonsenap och \u00e4ggula. De mest k\u00e4nda emulsionerna \u00e4r majonn\u00e4s, hollandaise och b\u00e9arnaise. K\u00e4nn p\u00e5 dem s\u00e5 att de \u00e4r riktigt mjuka. Anv\u00e4nd g\u00e4rna en sticka, men f\u00f6rst n\u00e4r du tror de b\u00f6rjar bli klara s\u00e5 du inte punkterar dem f\u00f6r tidigt. Mot slutet av tiden l\u00e4gger du in de hela vitl\u00f6karna med skal bredvid och l\u00e5ter dem baka mjuka, cirka 30-40 minuter. L\u00e5t svalna n\u00e5got innan du forts\u00e4tter.<\/p>\n<p>Dela s\u00f6tpotatisarna p\u00e5 l\u00e4ngden och gr\u00f6p ur det mjukbakade k\u00f6ttet och l\u00e4gg i en h\u00f6g mixersk\u00e5l anpassad till din stavmixer. Skala vitl\u00f6karna och l\u00e4gg i dem ocks\u00e5. Pressa i citronsaft (se till att k\u00e4rnorna inte kommer med), klicka i dijonsenap, salta, peppra och krydda med chipotle och starkt paprikapulver. Mixa till en sl\u00e4t massa. Forts\u00e4tt sedan att mixa medan du droppvis tills\u00e4tter oljan. N\u00e4r du tycker din emulsion har fin konsistens och smak \u00e4r den klar.
