L\u00e5ngsamstekt gul l\u00f6k, schalottenl\u00f6k och vitl\u00f6k, mangolden, bladspenat, en aning chili (ocks\u00e5 den hemodlad) och fetaost blev en utm\u00e4rkt pastas\u00e5s. B\u00f6rja med att steka den gula l\u00f6ken i olja p\u00e5 medell\u00e5g v\u00e4rme i tjockbottnad panna. S\u00e5 sm\u00e5ningom l\u00e4gger du i schalottenl\u00f6ken och vitl\u00f6ken och forts\u00e4tter att l\u00e5ngsamsteka s\u00e5 att alla milda s\u00f6ta n\u00f6tiga smaker frig\u00f6rs. Salta och r\u00f6r d\u00e5 och d\u00e5. N\u00e4r pastan \u00e4r n\u00e4stan f\u00e4rdigkokt tills\u00e4tter du mangolden som du skurit i strimlor, b\u00f6rja med stj\u00e4lkarna och l\u00e4gg sedan i bladen och \u00e4ven spenaten samt chilin. Krydda med peppar, \u00f6rter och \u00f6rtsalt samt citronskal. Smula i fetaosten, ringla olivolja \u00f6ver, peppra lite till och pressa citron \u00f6ver. Blanda ner din nykokta pasta som du givetvis kokat s\u00e5 att den \u00e4r italienskt perfekt al dente, med en liten h\u00e5rd k\u00e4rna i mitten f\u00f6r att inte helt leal\u00f6st tappa stunsen.
