Roquefort har en alldeles speciell fantastisk smak med sin s\u00e4lta och syrlighet och i den h\u00e4r pajen tillsammans med den friska aningen beska mangolden blir det en h\u00e4rlig smakmix. Tills\u00e4tt det kalla sm\u00f6ret skuret i kuber. K\u00f6r tills det blir en smulig massa. Tills\u00e4tt det iskalla vattnet genom locket medan du fortfarande k\u00f6r maskinen tills degen g\u00e5tt ihop och blivit en klump. Lyft ur den, kn\u00e5da ihop den och l\u00e4gg den i kylen med plast eller en fuktig k\u00f6kshandduk omkring. L\u00e5t degen vila minst 30 minuter, g\u00e4rna en timme.<\/p>\n<p>Under tiden tar du itu med fyllningen: Strimla mangolden, s\u00e4rskilt stj\u00e4lkarna m\u00e5r bra av att vara ganska nerskurna. Fr\u00e4s vitl\u00f6k i oljan p\u00e5 medelh\u00f6g v\u00e4rme, tills\u00e4tt mangoldstj\u00e4lkarna f\u00f6rst och efter ett tag \u00e4ven bladen som du strimlat. L\u00e5t fr\u00e4sa tills det blivit mjukt. Peppra och salta eventuellt helt l\u00e4tt. Man kan \u00e4ven ha i provensalska kryddor och kanske en aning chilikrydda.<\/p>\n<p>Tryck ut eller kavla degen och l\u00e4gg i pajformen. St\u00e4ll g\u00e4rna in pajformen med den uttryckta degen i kylen ett tag s\u00e5 att den s\u00e4tter sig innan du gr\u00e4ddar den i 200 &#8211; 225 grader i ca 10-15 minuter s\u00e5 att den b\u00f6rjar f\u00e5 fin f\u00e4rg och har stelnat. Lyft ut pajformen och l\u00e5t den svalna helt l\u00e4tt, bred ut mangolden p\u00e5 botten och smula roquefortosten \u00f6ver. Vispa ihop \u00e4ggen med gr\u00e4dde och mj\u00f6lk. H\u00e4ll det \u00f6ver pajfyllnigen. Pudra eventuellt med lite paprikapulver och peppra. St\u00e4ll in pajen i ugnen som du s\u00e4nkt till 175 grader. Gr\u00e4dda pajen ca 30 minuter tills fyllningen stelnat.
