Jag anv\u00e4nde f\u00e4rdigskalade r\u00e4kor som man k\u00f6per i burk i en lag, men f\u00f6r extra festligt kan man ju skala finfina r\u00e4kor sj\u00e4lv. <\/strong><\/p>\n<p><b>R\u00e4tten \u00e4r ganska snabblagad och har du dessutom gjort gr\u00f6nk\u00e5lscr\u00e8men i f\u00f6rv\u00e4g g\u00e5r det otroligt fort att f\u00e5 till denna goda r\u00e4tt som funkar b\u00e5de som f\u00f6rr\u00e4tt eller huvudr\u00e4tt. Som&nbsp;<\/b><span style=\"font-weight: 600\">alternativ<\/span><b>&nbsp;till gr\u00f6nk\u00e5lscr\u00e8men kn man g\u00e4rna ta ruccola, vanlig pesto eller ramsl\u00f6kspesto. Det g\u00e5r \u00e4ven att variera med strimlor av r\u00f6kt lax i st\u00e4llet f\u00f6r r\u00e4kor.&nbsp;<\/b><\/p>\n<p><em><strong>Du beh\u00f6ver f\u00f6r 4 personer:&nbsp;<\/strong><\/em><\/p>\n<p>400-500 gram pasta efter tillg\u00e5ng och smak &#8211; jag anv\u00e4nde glutenfria spiraler, fussili<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-25778\" src=\"http:\/\/files.katinkaskitchen.com\/2016\/10\/IMG_8710-300x300.jpg\" alt=\"img_8710\" width=\"300\" height=\"300\" srcset=\"https:\/\/files.katinkaskitchen.com\/2016\/10\/IMG_8710-300x300.jpg 300w, https:\/\/files.katinkaskitchen.com\/2016\/10\/IMG_8710-150x150.jpg 150w, https:\/\/files.katinkaskitchen.com\/2016\/10\/IMG_8710-768x768.jpg 768w, https:\/\/files.katinkaskitchen.com\/2016\/10\/IMG_8710-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>f\u00e4rska r\u00e4kor<\/p>\n<p><em>Till gr\u00f6nk\u00e5lscr\u00e8men:&nbsp;<\/em><\/p>\n<p>500 gram f\u00e4rsk gr\u00f6nk\u00e5l alternativt fryst gr\u00f6nk\u00e5l<\/p>\n<p>4-6 schalottenl\u00f6kar, skalade och hackade<\/p>\n<p>en rej\u00e4l klick sm\u00f6r<\/p>\n<p>salt och peppar<\/p>\n<p>g\u00e4rna ett gott \u00f6rtsalt (jag anv\u00e4nder min mors hemgjorda)<\/p>\n<p>lite av kokspadet &#8211; ca 0,5 dl<\/p>\n<p>ca 30 gram sm\u00f6r<\/p>\n<p>1\/2 &#8211; 1 dl gr\u00e4dde (man kan \u00e4ven anv\u00e4nda havregr\u00e4dde)<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>B\u00f6rja med att g\u00f6ra gr\u00f6nk\u00e5lscr\u00e8men: sk\u00e4r bort alla h\u00e5rda stj\u00e4lkar fr\u00e5n bladen. Strimla bladen. Koka gr\u00f6nk\u00e5len i saltat vatten i ca 5-10 minuter tills den \u00e4r mjuk. Under tiden steker du schalottenl\u00f6ken i rikligt med sm\u00f6r med salt p\u00e5 medell\u00e5g v\u00e4rme tills den blir helt mjukkokt och f\u00e5r fantastiska smaknoter. Dra pannan fr\u00e5n v\u00e4rmen och l\u00e5t l\u00f6ken svalna en aning. Sila av den kokta gr\u00f6nk\u00e5len men spara en dl av kokvattnet.<\/p>\n<p>Mixa gr\u00f6nk\u00e5len med den sm\u00f6rstekta schalottenl\u00f6ken, en halv dl kokvatten, en rej\u00e4l klick sm\u00f6r, \u00f6rtsalt och peppar. Mixa helt sl\u00e4tt och kolla ifall du beh\u00f6ver sp\u00e4da med lite mer kokvatten. T\u00e4nk p\u00e5 att du ska tills\u00e4tta en aning gr\u00e4dde sedan. H\u00e4ll din gr\u00f6nk\u00e5lscr\u00e8me tillbaka i kastrullen eller sauteusen du stekt schalottenl\u00f6ken i. Tills\u00e4tt en klick sm\u00f6r och lite gr\u00e4dde, smaka av om du beh\u00f6ver mer salt och\/eller peppar. L\u00e5t kr\u00e4men v\u00e4rmas upp. Koka din pasta s\u00e5 att den \u00e4r perfekt al dente, med en k\u00e4rna av tuggmotst\u00e5nd som italienarna vill ha den. H\u00e4ll av pastan, blanda ner den i gr\u00f6nk\u00e5lscr\u00e8men.<\/p>\n<p>L\u00e4gg upp din nykokta gr\u00f6nskimrande pasta i tallrikar och toppa med de skalade r\u00e4korna. Det \u00e4r gott att \u00e4ven riva lite citronskal \u00f6ver.
