Koka ihop socker och vatten till en simmig lag. Koka den p\u00e5 4-5:an och r\u00f6r d\u00e5 och d\u00e5 s\u00e5 att sockret l\u00f6ser sig. N\u00e4r det gjort det l\u00e5ter du den koka lite till s\u00e5 den blir l\u00e4tt simmig. Tag den av v\u00e4rmen och st\u00e4ll att svalna. Om du inte riktigt hunnit tina passionsfrukten l\u00e4gger du i den i den varma lagen och r\u00f6r runt s\u00e5 att den sm\u00e4lter. Men eftersom jag tycker glassmaskinen f\u00f6r ett ov\u00e4sen brukar jag g\u00f6ra sorbeten i f\u00f6rv\u00e4g och l\u00e4gg i en bunke med t\u00e4ttslutande lock i frysen. Tag fram den ett tag innan servering s\u00e5 den bli lagom mjuk att skopa upp i fina kulor.
