De kan \u00e4ven serveras som f\u00f6rr\u00e4tt.<\/h3>\n<p>\u00bd kg endiver<\/p>\n<p>30 gram sm\u00f6r<\/p>\n<p>pressad citron<\/p>\n<p>salt och peppar<\/p>\n<p>Sk\u00e4r bort den tjocka h\u00e5rda nederdelen p\u00e5 endiverna, dela dem p\u00e5 l\u00e4ngden och sk\u00f6lj dem noga s\u00e5 all sand eller jord f\u00f6rsvinner. Torka dem l\u00e4tt och l\u00e4gg dem i en kastrull eller gryta d\u00e4r du sm\u00e4lt sm\u00f6ret. Pressa \u00f6ver lite citronsaft och smaka av med salt och peppar. L\u00e4gg p\u00e5 ett t\u00e4ttslutande lock och l\u00e5t sjuda f\u00f6rsiktigt i en timme tills endiverna \u00e4r helt mjuka.<\/p>\n<p>G\u00f6r under tiden en b\u00e9chamels\u00e5s (vit grunds\u00e5s):<\/p>\n<p>30 gram sm\u00f6r<\/p>\n<p>3 msk vetemj\u00f6l<\/p>\n<p>5-6 dl mj\u00f6lk (till lasagnan \u00e4r det bra om s\u00e5sen \u00e4r ganska v\u00e4tskig i konsistensen)<\/p>\n<p>salt och peppar och ev. riven muskot till smaks\u00e4ttning<\/p>\n<p>Sm\u00e4lt sm\u00f6ret i en tjockbottnad kastrull. Drag av v\u00e4rmen och r\u00f6r i mj\u00f6let. R\u00f6r ordentligt s\u00e5 inte blir klumpar. R\u00f6r i mj\u00f6lk lite i taget. \u00d6verg\u00e5 till vispning efter ett tag. Faktum \u00e4r att f\u00f6r b\u00e4sta resultat ska mj\u00f6lken vara varm, men jag brukar k\u00f6ra genv\u00e4gen att anv\u00e4nda kall mj\u00f6lk. Det blir l\u00e4ttare klumpar d\u00e5, men om man har i lite mj\u00f6lk i taget och verkligen r\u00f6r ordentligt mellan varje skv\u00e4tt mj\u00f6lk s\u00e5 brukar resultatet bli helt okej. St\u00e4ll tillbaka kastrullen \u00f6ver mellanstark v\u00e4rme och r\u00f6r ordentligt hela tiden s\u00e5 inte br\u00e4nns fast i botten. Du kan inte l\u00e4mna s\u00e5sen f\u00f6r ett \u00f6gonblick.
