Stek l\u00f6k och vitl\u00f6k p\u00e5 l\u00e5g v\u00e4rme i olivolja, salta och l\u00e5t steka tills l\u00f6ken \u00e4r mjuk, ca tio minuter. L\u00e4gg \u00e4ven i de \u00f6vriga gr\u00f6nsaker du ev. har och vill anv\u00e4nda i omeletten. Vill du ha i spenat l\u00e4gger du i den strax innan du h\u00e4ller p\u00e5 \u00e4ggsmeten &#8211; dra upp v\u00e4rmen inf\u00f6r att du ska h\u00e4lla ner den och dra ner v\u00e4rmen direkt till v\u00e4ldigt l\u00e5gt. L\u00e4gg ett lock \u00f6ver och l\u00e5t st\u00e5 tills allt stelnat. Den som vill och anv\u00e4nder en stekpanna med handtak som g\u00e5r att ha i ugnen kan st\u00e4lla den att gr\u00e4dda klart i ugnen p\u00e5 ca 150-170 grader. Eftersom s\u00f6tpotatisemulsionen g\u00f6r att omelettsmeten blir kr\u00e4mig och mer som en slags \u00e4ggstanning g\u00e5r det inte att lyfta och h\u00e5lla p\u00e5 som man g\u00f6r vid vanlig omelettstekning, h\u00e4r beh\u00f6ver omeletten helt enkelt tid f\u00f6r att stelna i sin egen takt utan att den br\u00e4nns undertill. N\u00e4r hela omeletten &#8221;stannat&#8221; serverar du den. Jag str\u00f6dde strimlad basilika \u00f6ver och serverade bacon som jag tillagat p\u00e5 en pl\u00e5t i ugnen till, tillsammans med mina l\u00e5ngsamrostade tomater som jag g\u00e4rna g\u00f6r ett j\u00e4tteg\u00e4ng av och har att plocka fram av.
