Detta \u00e4r en b\u00e5de v\u00e4ldigt nyttig, god och vacker r\u00e4tt som g\u00e5r ganska fort att f\u00e5 ihop. Jag gjorde en variant p\u00e5 den tahinis\u00e5s vi ofta har till lax. I st\u00e4llet f\u00f6r bara lime och\/eller citron anv\u00e4nde jag n\u00e5gra fler av vinterns h\u00e4rliga citrusfrukter; blodapelsin och clementin. Det intressanta var att vitl\u00f6kssmaken blev mer framtr\u00e4dande med s\u00f6tman fr\u00e5n apelsin och clementin, medan syran i lime och citron drar ner de starkare noterna fr\u00e5n b\u00e5de vitl\u00f6ken och chilin.&nbsp;<\/strong><\/p>\n<p>Jag har l\u00e4rt mig att om man bl\u00f6tl\u00e4gger linserna n\u00e5gra timmar s\u00e5 blir de mer l\u00e4ttsm\u00e4lta f\u00f6r magen.&nbsp;<img timjan<\/p>\n<p>1,5 dl quinoa (jag anv\u00e4nde r\u00f6d quinoa), kokt i 4 dl vatten med en gr\u00f6nsaksbuljongt\u00e4rning<\/p>\n<p>4 s\u00f6tpotatisar, skalade och skurna i klyftor<\/p>\n<p>2 zucchinis, tv\u00e4ttade och skurna i klyftor<\/p>\n<p>1\/2 tsk torkad chili i flagor eller chiliexplosion (d\u00e5 kan du hoppa \u00f6ver saltet)<\/p>\n<p>1 f\u00e4rsk chili<img loading=\"lazy\" h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>L\u00e4gg s\u00f6tpotatisklyftorna i en sk\u00e5l, ringla \u00f6ver olja, salta och tills\u00e4tt chiliflagorna och det finrivna limeskalet. Om du v\u00e4ljer Santa Marias Chili Explosion hoppar du \u00f6ver saltet f\u00f6r det \u00e4r redan salt i den blandningen. Blanda runt s\u00e5 alla bitar f\u00e5r olja och smaks\u00e4ttning p\u00e5 sig, l\u00e4gg upp p\u00e5 en pl\u00e5t med bakpl\u00e5tspapper. G\u00f6r likadant med <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-26309\" src=\"http:\/\/files.katinkaskitchen.com\/2017\/01\/fullsizeoutput_532-300x300.jpeg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"https:\/\/files.katinkaskitchen.com\/2017\/01\/fullsizeoutput_532-300x300.jpeg 300w, https:\/\/files.katinkaskitchen.com\/2017\/01\/fullsizeoutput_532-150x150.jpeg 150w, https:\/\/files.katinkaskitchen.com\/2017\/01\/fullsizeoutput_532-768x768.jpeg 768w, https:\/\/files.katinkaskitchen.com\/2017\/01\/fullsizeoutput_532-1024x1024.jpeg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>zucchinibitarna med olja, f\u00e4rsk chili, \u00f6rter och citronskal. L\u00e4gg upp zucchinibitarna p\u00e5 andra halvan av pl\u00e5ten. Rosta i ugnen som du v\u00e4rmt till 175 grader tills s\u00f6tpotatisen \u00e4r helt mjuk och f\u00e5tt fin f\u00e4rg.<\/p>\n<p>Under tiden kokar du belugalinserna i en kastrull med ett lagerblad och ev. en kvist timjan. Ta inte torkad timjan eftersom den inte g\u00e5r att sila ifr\u00e5n eller lyfta bort lika l\u00e4tt som en kvist. Koka i rikligt med saltat vatten i ca 15-20 minuter &#8211; pr\u00f6va s\u00e5 de \u00e4r mjuka men inte s\u00f6nderkokta. H\u00e4ll av vattnet.<\/p>\n<p>Koka quinoan med en buljongt\u00e4rning tills allt vatten \u00e4r absorberat och quinoan \u00e4r mjuk.<\/p>\n<p>Mixa ihop s\u00e5sen med en stavmixer, smaka av s\u00e5 att du har bra balans p\u00e5 smakerna &#8211; kanske lite mer tahini, mer citron eller lime..?<\/p>\n<p>Arrangera quinoan, linserna, s\u00f6tpotatisen och zucchinin p\u00e5 ett serveringsfat. L\u00e4gg p\u00e5 halvorna av cocktailtomater och str\u00f6 koriander \u00f6ver. Jag borde anv\u00e4nt ett st\u00f6rre fat s\u00e5 man kunde se \u00e4ven quinoan och linserna som i st\u00e4llet h\u00e4r begravdes av de rostade ingredienserna.
