Jag har sl\u00e4pat hem den fr\u00e5n v\u00e4nner i Italien som odlar den p\u00e5 sin takterrass i Rom, och har lagat b\u00e5de pannacotta och ljuvlig s\u00e5s till kyckling p\u00e5 bergamotter. Den kan njutas som den \u00e4r i en liten kula eller serveras med en bavarois smaksatt med vitt Earl Grey-te samt platta mar\u00e4ngflarn smaksatta med till exempel bergamottskal och l\u00e5ngpeppar. L\u00e5t svalna. Blanda ner juicen i det mesta av sockerlagen men ta undan drygt 1\/2 dl f\u00f6r att smaka av s\u00e5 att blandningen inte blir f\u00f6r s\u00f6t. Sila bort k\u00e4rnorna n\u00e4r du h\u00e4ller i juicen (bergamotten har ganska mycket sm\u00e5 k\u00e4rnor som annars l\u00e4tt slinker med). T\u00e4nk p\u00e5 att mycket av s\u00f6tman f\u00f6rsvinner och mildras n\u00e4r smeten fryses och det blir sorbet. St\u00e4ll kallt tills det \u00e4r dags att h\u00e4lla blandningen i glassmaskinen. K\u00f6r smeten i glassmaskinen tills den blivit vit och <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-26517\" src=\"http:\/\/files.katinkaskitchen.com\/2017\/02\/fullsizeoutput_634-300x225.jpeg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2017\/02\/fullsizeoutput_634-300x225.jpeg 300w, https:\/\/files.katinkaskitchen.com\/2017\/02\/fullsizeoutput_634-150x113.jpeg 150w, https:\/\/files.katinkaskitchen.com\/2017\/02\/fullsizeoutput_634-768x576.jpeg 768w, https:\/\/files.katinkaskitchen.com\/2017\/02\/fullsizeoutput_634-1024x768.jpeg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>fluffig och snurrar kring sin egen axel. Servera direkt, g\u00e4rna i sk\u00e5lar eller couper som du f\u00f6rvarat i frysen s\u00e5 sorbeten inte sm\u00e4lter direkt. Eller g\u00f6r som jag och frys in sorbeten i en plastbytta med lock. Tag fram den ca 15 minuter innan den ska serveras och l\u00e5t den st\u00e5 i kylen s\u00e5 blir den perfekt i konsistensen.<\/p>\n<p>Jag serverade bergamottsorbeten p\u00e5 en fransk mousse, en bavarois, smaksatt med vitt Earl Grey-te.
