Till en b\u00f6rjan kommer det att skv\u00e4tta och bubbla ganska friskt. Efter ett tag blir bubblorna mindre och mindre och till slut blir det helt tyst och man ser att det b\u00f6rjar bli mer gyllene och sedan m\u00f6rkna. Du ska dra kastrullen av v\u00e4rmen precis n\u00e4r det b\u00f6rjar m\u00f6rkna, s\u00e5 det inte blir br\u00e4nt och d\u00e5 b\u00f6rjar smaka beskt. L\u00e5t sm\u00f6ret svalna en hel del.<\/p>\n<p>Vispa \u00e4ggen med sockret s\u00e5 det blir ett ljust p\u00f6sigt \u00e4ggskum, vispa g\u00e4rna ett tag. Vispa ner vaniljsocker, kakaopulver, vodka eller vad du nu valt samt mj\u00f6l och tills\u00e4tt det avsvalnade sm\u00e4lta sm\u00f6ret. Sila g\u00e4rna av sm\u00f6ret ner i ett literm\u00e5tt eller liknande innan du anv\u00e4nder det eller sila direkt ner i bunken &#8211; du ska inte ta med de stelnade resterna i botten som best\u00e5r av mj\u00f6lkproteiner. Eftersom en del v\u00e4tska avdunstar n\u00e4r du sm\u00e4lter sm\u00f6ret tar du med s\u00e5 mycket av det klarade sm\u00f6ret som du kan utan att skum eller solidare avlagringar kommer med. Jag v\u00e4gde faktiskt och blev f\u00f6rv\u00e5nad hur mycket som hade f\u00f6rsvunnit av de 150 gram jag startade med &#8211; det blev all klarad v\u00e4tska som gick \u00e5t f\u00f6r att f\u00e5 ihop 100 gram. Blanda smeten ordentligt.<\/p>\n<p>H\u00e4ll upp smeten i bullformar som du st\u00e4llt p\u00e5 en muffinspl\u00e5t eller i muffinsformar i metall som h\u00e5ller formen och inte p\u00f6ser ut \u00f6ver kanterna. En stor matsked i varje form brukar r\u00e4cka. Tryck i 3-4 hallon i varje form. Eller g\u00f6r som jag och g\u00f6r en stor form, en vanlig form med avtagbara kanter. Tryck ner hallon fr\u00e5n ett paket frusna hallon. Gr\u00e4dda i ca 175 grader i 15-20 minuter &#8211; de ska vara kladdiga i mitten fortfarande! De stelnar lite till n\u00e4r de svalnat ocks\u00e5.<\/p>\n<p>Servera varma, ljumna eller avsvalnade med l\u00e4ttvispad gr\u00e4dde eller glass eller bara som de \u00e4r.
