En ny r\u00e4tt s\u00e5g dagens ljus: spaghetti brocconara! Det \u00e4r helt enkelt som en gr\u00f6nsaksf\u00f6rst\u00e4rkt carbonara, blev gott och uppskattat. Stek under tiden schalottenl\u00f6ken i sm\u00f6r eller olja eller en blandning p\u00e5 medell\u00e5g v\u00e4rme s\u00e5 den blir mjuk utan att ta f\u00e4rg. Stek baconet antingen skuret i strimlor i stekpannan eller som jag f\u00f6redrar: l\u00e4gg baconbitarna p\u00e5 ett bakpl\u00e5tspapper p\u00e5 en pl\u00e5t och st\u00e4ll in i ugnen p\u00e5 200-225 grader. Efter cirka tio minuter har du perfekt stekt bacon. Tag ut, l\u00e5t svalna lite och sk\u00e4r eller bryt i bitar. Anv\u00e4nd g\u00e4rna baconfettet &#8211; h\u00e4ll ner det i stekpannan med l\u00f6ken, broccolin och baconbitarna.<\/p>\n<p>Riv parmesanen, rada upp dina \u00e4ggulor (\u00e4ggvitorna sparar du och g\u00f6r en god mar\u00e4ng p\u00e5 &#8211; recept finner du h\u00e4r p\u00e5 Katinkas Kitchen genom att s\u00f6ka i s\u00f6krutan uppe till h\u00f6ger &#8211; eller s\u00e5 har du som jag \u00e4ggulor kvar sedan du gjort just mar\u00e4ng). N\u00e4r l\u00f6ken blivit mjuk tills\u00e4tter du broccolin skuren i mindre bitar i pannan. Krydda och l\u00e5t puttra ihop p\u00e5 ganska l\u00e5g v\u00e4rme medan du kokar pastan al dente. H\u00e4ll av pastan, v\u00e4nd ner den i s\u00e5sen, dra pannan av v\u00e4rmen och tills\u00e4tt tv\u00e5 \u00e4ggulor och r\u00f6r runt, tills\u00e4tt \u00e4ven lite av parmesanen men spara resten till uppl\u00e4ggningen.<\/p>\n<p>L\u00e4gg direkt upp p\u00e5 tallrikar, toppa med parmesan och en \u00e4ggula p\u00e5 varje tallrik, antingen i sitt skal som balanserar p\u00e5 pastan eller direkt p\u00e5 pastan men d\u00e5 brukar den ofta glida ner. &nbsp;Ta n\u00e5gra rej\u00e4la tag med pepparkvarnen \u00f6ver &#8211; det ska liksom en carbonara (kolarhustruns pasta) vara svartprickigt och pikant!<\/p>\n<p>Tips: om du har gjort mar\u00e4ng dagen innan som jag och sparar \u00e4ggulorna till en carbo- eller gambonara dagen efter \u00e4r det b\u00e4st att l\u00e4gga tillbaka \u00e4ggulorna i sina skal men sedan l\u00e4gga plast under skalen i \u00e4ggkartongen.
