I onsdags kunde ni l\u00e4sa om vad antiinflammatorisk mat \u00e4r, d\u00e4r jag n\u00e4mner en uppsj\u00f6 ingredienser. M\u00e5nga av dem \u00e4r vi mer vana vid, s\u00e5som vitl\u00f6k, l\u00f6k, flera gr\u00f6nsaker, \u00f6rtkryddor, lime, lax och andra feta fiskar och \u00e4ven fisk \u00f6ver huvud taget, n\u00f6tter etc. <\/strong><\/p>\n<p><strong>Sedan \u00e4r det en del ingredienser som vi h\u00e5ller p\u00e5 att l\u00e4ra oss d\u00e5 de har kommit till oss p\u00e5 senare \u00e5r, s\u00e5som quinoa, chiafr\u00f6n och kanske bovete \u00e4ven om det brukar anv\u00e4ndas till blinier. <\/strong><\/p>\n<p><strong>Och s\u00e5 har vi det ayurvediska som \u00e4r en gammal indisk l\u00e4ra som sp\u00e4nner \u00f6ver mycket<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-215\" src=\"http:\/\/files.katinkaskitchen.com\/2009\/11\/chili1.jpg\" alt=\"\" width=\"199\" height=\"145\"> mer \u00e4n bara mat. Jag fick upp \u00f6gonen f\u00f6r det indiska k\u00f6ket n\u00e4r jag var yngre och bodde i England och n\u00e4r jag som flygv\u00e4rdinna kom till Delhi med j\u00e4mna mellanrum. Den indiska kokkonsten delar in ingredienser i kategorier &#8221;ingredienser som reder och&nbsp;f\u00f6rtjockar s\u00e5ser och grytor&#8221;, &#8221;ingredienser som ger f\u00e4rg&#8221;, &#8221;surg\u00f6rande ingredienser&#8221; och d\u00e4refter &#8221;kryddorna&#8221;.<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-517\" src=\"http:\/\/files.katinkaskitchen.com\/2010\/01\/saffran.jpg\" alt=\"\" width=\"199\" height=\"133\"> <\/strong><\/p>\n<p><strong>Bland de ingredienser som reder och g\u00f6r s\u00e5ser tjockare ing\u00e5r intressant nog b\u00e5de l\u00f6k, kokosmj\u00f6lk, yoghurt, pistagen\u00f6tter, cashewn\u00f6tter, <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-2360\" src=\"http:\/\/files.katinkaskitchen.com\/2010\/04\/linser-march\u00e9-Katinkas-Kitchen-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2010\/04\/linser-march\u00e9-Katinkas-Kitchen-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2010\/04\/linser-march\u00e9-Katinkas-Kitchen-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2010\/04\/linser-march\u00e9-Katinkas-Kitchen.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>jordn\u00f6tter, mandlar, sesamfr\u00f6n, bruna senapsfr\u00f6n, vallmofr\u00f6n, pumpafr\u00f6n, melonk\u00e4rnor, linser, kik\u00e4rtor och kik\u00e4rtsmj\u00f6l.<\/strong><\/p>\n<p><strong>Bland de som ger f\u00e4rg finner vi gurkmeja<\/strong><b>, saffran, r\u00f6d chili &#8211; fr\u00e4mst torkade sorter s\u00e5som&nbsp;kashmir chili, r\u00f6da tomater, gul l\u00f6k som l\u00e5tit stekas m\u00f6rkbrun, korianderfr\u00f6n i mald form som stekts i 5-6 minuter, tandoorif\u00e4rg samt garam masala som \u00e4r en kryddblandning best\u00e5ende av kanel, nejlikor, svartpeppar och <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-13525\" src=\"http:\/\/files.katinkaskitchen.com\/2010\/02\/indian-night-Katinkas-Kitchen-21-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2010\/02\/indian-night-Katinkas-Kitchen-21-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2010\/02\/indian-night-Katinkas-Kitchen-21-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2010\/02\/indian-night-Katinkas-Kitchen-21-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>svart kardemumma. Garam betyder v\u00e4rmande eller varm och masala \u00e4r kryddor. Garam masala ska jag skriva om i eget inl\u00e4gg fram\u00f6ver men f\u00f6rst kommer ett inl\u00e4gg p\u00e5 s\u00f6ndag om en massa h\u00e4rliga ayurvediska kryddor. Vi g\u00e5r vidare i det ayurvediska k\u00f6ket:&nbsp;<\/b><\/p>\n<p><strong>Bland de ingredienser som \u00e4r surg\u00f6rande finner vi tomat, yoghurt (som allts\u00e5 b\u00e5de \u00e4r redande och surg\u00f6rande) och vin\u00e4ger. H\u00e4r finns ocks\u00e5 tamarind som \u00e4r en frukt vars fr\u00f6skidor man sk\u00f6rdar, k\u00e4rnar ur och torkar. N\u00e4r den sedan <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-13501\" src=\"http:\/\/files.katinkaskitchen.com\/2012\/09\/indian-night-Katinkas-Kitchen-3-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2012\/09\/indian-night-Katinkas-Kitchen-3-300x225.jpg 300w, https:\/\/files.katinkaskitchen.com\/2012\/09\/indian-night-Katinkas-Kitchen-3-150x112.jpg 150w, https:\/\/files.katinkaskitchen.com\/2012\/09\/indian-night-Katinkas-Kitchen-3-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>ska anv\u00e4ndas bl\u00f6tl\u00e4ggs den och juicen anv\u00e4nds. I aff\u00e4rer med asiatiskt sortiment kan vi hitta torkad tamarind och \u00e4ven en tamarindpasta, som en kr\u00e4m eller <em>paste<\/em>. Vidare har vi s\u00e5klart lime (intressant nog n\u00e4mner de inte citron), r\u00e5 mango(!) och n\u00e5got som heter cocum och \u00e4r ett fr\u00f6 fr\u00e5n ett stort tr\u00e4d som ger b\u00e5de ljus r\u00f6d f\u00e4rg och syrlig smak. Cocum ser ut som en r\u00f6dkantad broccoli-\u00f6rt och anv\u00e4nds \u00e4ven f\u00f6r att g\u00f6ra sorbet eller l\u00e4ggs i vatten som sedan dricks f\u00f6r att bota n\u00e4sselutslag och n\u00e4sselfeber. &nbsp;<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-28477\" src=\"http:\/\/files.katinkaskitchen.com\/2018\/01\/fullsizeoutput_1365-300x225.jpeg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2018\/01\/fullsizeoutput_1365-300x225.jpeg 300w, https:\/\/files.katinkaskitchen.com\/2018\/01\/fullsizeoutput_1365-150x113.jpeg 150w, https:\/\/files.katinkaskitchen.com\/2018\/01\/fullsizeoutput_1365-768x576.jpeg 768w, https:\/\/files.katinkaskitchen.com\/2018\/01\/fullsizeoutput_1365-1024x768.jpeg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/strong><\/p>\n<p><strong>Och s\u00e5 har vi som sagt alla de fantastiska ayurvediska kryddorna som \u00e4r s\u00e5 v\u00e4lg\u00f6rande p\u00e5 m\u00e5nga s\u00e4tt och dessutom smakar fantastiskt. De g\u00e5r verkligen inte av f\u00f6r hackor och ju mer jag l\u00e4r mig om dem desto mer imponerad och f\u00f6rundrad blir jag. P\u00e5 en av bilderna ser du bland annat en indisk l\u00f6ksallad, cachumber, d\u00e4r l\u00f6ken s\u00e5 att s\u00e4ga marinerats i citronjuice med salt och spiskummin &#8211; otroligt gott och milt(!) och enligt ayurveda bra f\u00f6r matsm\u00e4ltningen. Den serveras ofta f\u00f6re maten tillsammans med poppadoms, som ju \u00e4r gjorda p\u00e5 linser eller mungb\u00f6nor, chutney och limepickle.
