De r\u00f6da paprikorna fick \u00e5ka in i kylen och kom v\u00e4l till pass n\u00e5gra dagar senare n\u00e4r de fick slinka ner i mixern tillsammans med cashewn\u00f6tter, v\u00e5r goda abruzzesiska olivolja, b\u00e5de rostad och lite f\u00e4rsk vitl\u00f6k samt en v\u00e4llagrad parmesan. Swish och vi hade en f\u00f6rf\u00f6riskt god oranger\u00f6d pesto till v\u00e5r middag. <\/strong><\/p>\n<p><strong>Peston passar att servera till pasta s\u00e5klart men \u00e4ven som s\u00e5s till fisk, kyckling eller k\u00f6tt eller i <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-28612\" src=\"http:\/\/files.katinkaskitchen.com\/2018\/02\/fullsizeoutput_13df-300x225.jpeg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2018\/02\/fullsizeoutput_13df-300x225.jpeg 300w, https:\/\/files.katinkaskitchen.com\/2018\/02\/fullsizeoutput_13df-150x113.jpeg 150w, https:\/\/files.katinkaskitchen.com\/2018\/02\/fullsizeoutput_13df-768x576.jpeg 768w, https:\/\/files.katinkaskitchen.com\/2018\/02\/fullsizeoutput_13df-1024x768.jpeg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>en sk\u00e5l till tapas och kanske ett gott br\u00f6d.&nbsp;<\/strong><\/p>\n<p><em><strong>Du beh\u00f6ver f\u00f6r 4 personer:&nbsp;<\/strong><\/em><\/p>\n<p>6 r\u00f6da paprikor, skurna i kvartsbitar som rostas (l\u00e4s mer nedan)<\/p>\n<p>3 vitl\u00f6ksklyftor, varav tv\u00e5 rostas i ugn<\/p>\n<p>drygt 1\/2 dl cashewn\u00f6tter eller mandlar &#8211; eller en blandning av dem<\/p>\n<p>ca 1 1\/2 &#8211; 2 dl olivolja av god och mild kvalitet (annars blir det l\u00e4tt f\u00f6r beskt)<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-28613\" src=\"http:\/\/files.katinkaskitchen.com\/2018\/02\/IMG_0885-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"https:\/\/files.katinkaskitchen.com\/2018\/02\/IMG_0885-300x300.jpg 300w, https:\/\/files.katinkaskitchen.com\/2018\/02\/IMG_0885-150x150.jpg 150w, https:\/\/files.katinkaskitchen.com\/2018\/02\/IMG_0885-768x768.jpg 768w, https:\/\/files.katinkaskitchen.com\/2018\/02\/IMG_0885-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>ca 2 dl riven parmesan av god kvalitet, g\u00e4rna v\u00e4llagrad<\/p>\n<p>lite salt och peppar<\/p>\n<p>n\u00e5gra droppar pressad citron<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>Sk\u00e4r paprikorna i fyra delar, k\u00e4rna ur och l\u00e4gg dem med skalsidan upp\u00e5t p\u00e5 en pl\u00e5t som du kl\u00e4tt med bakpl\u00e5tspapper. St\u00e4ll in dem i ugnen under grillelementet p\u00e5 h\u00f6gsta v\u00e4rmen. L\u00e5t dem grillas s\u00e5 att skalen blir svarta och f\u00e5r som bl\u00e5sor &#8211; var inte orolig, faktum \u00e4r att det \u00e4r de som blivit lite svarta som sedan blir godast n\u00e4r skalet dras av. Baka g\u00e4rna 2 vitl\u00f6ksklyftor hela i ugn p\u00e5 mer normal temperatur. N\u00e4r de bakats s\u00e5 h\u00e4r f\u00e5r de en otroligt fin n\u00f6tig mj\u00e4ll smak som skiljer sig mycket fr\u00e5n hur vitl\u00f6k annars kan smaka.<\/p>\n<p>Tag ut dina v\u00e4lgrillade paprikor och l\u00e4gg dem i en metallsk\u00e5l eller kastrull och l\u00e4gg p\u00e5 ett lock s\u00e5 de kan \u00e5nga ca 10 minuter samtidigt som de svalnar n\u00e5got. N\u00e4r de \u00e4r s\u00e5 svala s\u00e5 du kan h\u00e5lla i dem drar du av skalet. L\u00e4gg de skalade paprikasstrimlorna i mixern tillsammans med din rostade vitl\u00f6k som du nu skalat, cashewn\u00f6tter eller mandlar och olivolja samt salt, peppar och n\u00e5gra droppar citron. Tag det f\u00f6rsiktigt med saltet eftersom osten \u00e4r salt. Mixa ihop och tills\u00e4tt sedan den rivna osten och mixa ett tag till. Smaka av &#8211; kanske beh\u00f6ver du mer av n\u00e5got?
