Det verkar vara ovanligt d\u00e5ligt sommarv\u00e4der d\u00e4rhemma, men desto fler&nbsp;<\/b><span style=\"font-weight: 600\">kantareller<\/span><b>&nbsp;i skogarna. Ett s\u00e4tt att njuta detta skogens guld \u00e4r att g\u00f6ra en snabblagad pasta. H\u00e4r \u00e4r en god snabblagad version:&nbsp;<\/b><\/p>\n<p><em><strong>Du beh\u00f6ver f\u00f6r 4 personer: <\/strong><\/em><\/p>\n<p>500 gram kantareller (eller mer..!), rensade och skurna i bitar<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-29365\" src=\"http:\/\/files.katinkaskitchen.com\/2018\/09\/fullsizeoutput_1a4a-300x225.jpeg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/files.katinkaskitchen.com\/2018\/09\/fullsizeoutput_1a4a-300x225.jpeg 300w, https:\/\/files.katinkaskitchen.com\/2018\/09\/fullsizeoutput_1a4a-150x113.jpeg 150w, https:\/\/files.katinkaskitchen.com\/2018\/09\/fullsizeoutput_1a4a-768x576.jpeg 768w, https:\/\/files.katinkaskitchen.com\/2018\/09\/fullsizeoutput_1a4a-1024x768.jpeg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>2 schalottenl\u00f6kar, skalade och finhackade<\/p>\n<p>1 vitl\u00f6k, skalad och skuren p\u00e5 l\u00e4ngden<\/p>\n<p>en rej\u00e4l klick sm\u00f6r att steka i<\/p>\n<p>k\u00f6rvel eller annan \u00f6rtkrydda<\/p>\n<p>g\u00e4rna tryffelsalt &#8211; annars vanligt salt<\/p>\n<p>vitpeppar &amp; nymald svartpeppar<\/p>\n<p>2-3 msk Noilly Prat, en fransk Vermouth som finns att k\u00f6pa p\u00e5 Systembolaget eller en knapp dl vitt vin<\/p>\n<p>150-200 gram babyspenat eller bladspenat<\/p>\n<p>1 1\/2 &#8211; 2 dl gr\u00e4dde, jag anv\u00e4nder Valio laktosfri gr\u00e4dde (och f\u00e5r inget f\u00f6r att skriva det)<\/p>\n<p>ev. lite gr\u00f6nsaksbuljong eller kantarellbuljong\/fond (finns p\u00e5 flaska)<\/p>\n<p>400-500 gram pasta efter tillg\u00e5ng och smak (t.ex. penne, linguine&#8230;)<\/p>\n<p><em><strong>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/strong><\/em><\/p>\n<p>S\u00e4tt p\u00e5 pastavattnet.<\/p>\n<p>Fr\u00e4s schalottenl\u00f6ken i en klick sm\u00f6r \u00f6ver medell\u00e5g v\u00e4rme med lite salt tills l\u00f6ken \u00e4r genomskinlig och mjuk. Tills\u00e4tt \u00f6rter, Vermouth eller vitt vin samt buljong\/fond och l\u00e5t puttra ihop innan du tills\u00e4tter gr\u00e4dden och l\u00e5ter det hela puttra s\u00e5 att gr\u00e4dden reduceras och tjocknar.<\/p>\n<p>Under tiden steker du de rensade kantarellerna. Rensa dem med en liten borste, sk\u00e4r eventuellt bort nedersta biten om jordig eller m\u00f6rk men sk\u00f6lj dem inte! L\u00e4gg de uppskurna svamparna i en bra stekpanna utan fett och l\u00e5t fr\u00e4sa p\u00e5 medelh\u00f6g v\u00e4rme tills de v\u00e4tskar sig. N\u00e4r v\u00e4tskan puttrat in\/bort tills\u00e4tter du en rej\u00e4l klick sm\u00f6r, saltar och pepprar och steker dem lite gyllene och fina. H\u00e4ll svampen i din s\u00e5s. Tills\u00e4tt \u00e4ven spenaten och v\u00e4nd ner strax innan servering.<\/p>\n<p>H\u00e4ll av pastan som du kokt perfekt al denne, med ett visst tuggmotst\u00e5nd i mitten.
