Nu lagar ju jag inte s\u00e5 mycket husmanskost, utan mer&nbsp;<\/strong><b>medelhavskust &#8211; och jag skulle vilja p\u00e5st\u00e5 att det kommer sig av&nbsp;att min mormors husmanskost var s\u00e5 fantastiskt god att ingen i mina \u00f6gon genom mitt&nbsp;barnaminne&nbsp;kan n\u00e5 upp till den niv\u00e5n. Till exempel perfekt rotmos med morfars hemgjorda v\u00e4lkryddade fl\u00e4skkorv och m\u00e5nga andra underbara r\u00e4tter&#8230;<\/b><\/p>\n<p><b>Idag ger jag mig ut p\u00e5 djupare vatten och f\u00f6rs\u00f6ker g\u00f6ra dillk\u00f6tt. Men h\u00e4r kommer ett mer ursprungligt recept:&nbsp;<\/b><\/p>\n<p>Dillk\u00f6tt kokas traditionellt av lamm eller kalv. Jag anv\u00e4nde kalvstek och kan konstatera att den \u00e4r sv\u00e5r att koka, kanske ska man rentav steka den innan den l\u00e4ggs i en citron- och dillsmakande velout\u00e9 som det ju faktiskt r\u00f6r sig om, det vill s\u00e4ga en vit grunds\u00e5s, b\u00e9chamel, men gjord p\u00e5 \u00f6verv\u00e4gande del god buljong &#8211; i det h\u00e4r fallet kokspadet. L\u00e5t koka upp l\u00e4ttsaltat vatten som du blancherar k\u00f6ttet i helt hastigt, h\u00e4ll av vattnet och l\u00e4gg det sedan i en annan kastrull som du kokat upp med alla kryddor, mor\u00f6tter och l\u00f6k. L\u00e5t k\u00f6ttet sjuda f\u00f6rsiktigt i buljongen tills det \u00e4r precis kokt om du anv\u00e4nder stek. Om du d\u00e4remot anv\u00e4nder grytbitar, h\u00f6grev eller annat k\u00f6tt som kr\u00e4ver l\u00e5ng koktid l\u00e5ter du k\u00f6ttet helt enkelt koka i 2 &#8211; 2 1\/2 timme tills det \u00e4r helt m\u00f6rt och b\u00f6rjar falla is\u00e4r.<\/p>\n<p>Under tiden kan du koka ihop din \u00e4ttikslag, blanda alla ingredienser i en liten kastrull, l\u00e5t koka upp, r\u00f6r om s\u00e5 att sockret l\u00f6ser sig och st\u00e4ll sedan lagen \u00e5t sidan att svalna.<\/p>\n<p>G\u00f6r \u00e4ven i ordning eventuella tillbeh\u00f6r. Det passar bra med kokta mor\u00f6tter, socker\u00e4rtor, b\u00f6nor, \u00e4rtor eller <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-29418\" src=\"http:\/\/files.katinkaskitchen.com\/2018\/10\/IMG_6188-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"https:\/\/files.katinkaskitchen.com\/2018\/10\/IMG_6188-300x300.jpg 300w, https:\/\/files.katinkaskitchen.com\/2018\/10\/IMG_6188-150x150.jpg 150w, https:\/\/files.katinkaskitchen.com\/2018\/10\/IMG_6188-768x768.jpg 768w, https:\/\/files.katinkaskitchen.com\/2018\/10\/IMG_6188-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>bara en fr\u00e4sch sallad. Kokt eller pressad potatis tycker jag \u00e4r b\u00e4st till, vi gjorde pressad potatis.<\/p>\n<p>N\u00e4r k\u00f6ttet kokat f\u00e4rdigt lyfter du det ur buljongen. Reducera buljongen en aning, vilket betyder att du l\u00e5ter den koka ett tag s\u00e5 att en del v\u00e4tska kokar bort och smakerna koncentreras. Sedan kan du b\u00f6rja med s\u00e5sen. H\u00e5ll k\u00f6ttet n\u00e5gots\u00e5n\u00e4r varmt under lock s\u00e5 l\u00e4nge. Den buljong som inte g\u00e5r \u00e5t till s\u00e5sen kan du g\u00e4rna spara till en annan s\u00e5s eller soppa n\u00e5gon annan dag.<\/p>\n<p>Sm\u00e4lt sm\u00f6ret i en tjockbottnad kastrull. R\u00f6r i mj\u00f6let och l\u00e5t det hela puttra \u00f6ver medelh\u00f6g v\u00e4rme under konstant omr\u00f6rning med en spatel eller liknande tills sm\u00f6ret &#8221;kokat&#8221; ett tag s\u00e5 att mj\u00f6lsmaken f\u00f6rsvinner. Sm\u00f6ret ska inte ta alltf\u00f6r mycket f\u00e4rg men h\u00e4r kan det vara ok om det b\u00f6rjar f\u00e5 en viss karamellf\u00e4rg, men inte s\u00e5 m\u00f6rkt som till en bruns\u00e5s. Tills\u00e4tt den varma avsilade buljongen i ett svep, vispa ordentligt med en visp och l\u00e5t s\u00e5sen koka upp \u00f6ver medelh\u00f6g v\u00e4rme medan du r\u00f6r i den. N\u00e4r s\u00e5sen tjocknat och sjudit i dryga fem minuter b\u00f6r den vara i princip klar &#8211; det \u00e4r bara smaks\u00e4ttningen kvar. Tills\u00e4tt lite av \u00e4ttikslagen, smaka av och se till s\u00e5 att du f\u00e5r lagom med syra. Tills\u00e4tt \u00e4ven drygt h\u00e4lften av dillen, men spara en del till servering f\u00f6r fr\u00e4sch gr\u00f6n \u00f6rtig f\u00e4rg. L\u00e4gg i k\u00f6ttet och l\u00e5t det v\u00e4rmas upp i s\u00e5sen. Smaka av med salt, vitpeppar, \u00e4ttikslag och dill. Precis innan servering pressar du potatis, tar fram \u00f6vriga tillbeh\u00f6r och h\u00e4ller den resterande dillen \u00f6ver grytan.
