Detta har f\u00e5tt till f\u00f6ljd att jag inte lyckas l\u00e4gga foton h\u00f6gst upp och l\u00e4ngs med texten som tidigare. Inl\u00e4rningskurvan \u00e4r brant just nu, s\u00e5 hoppas kunna \u00e5terkomma med mer visuellt aptitliga recept inom kort. Tills dess finner ni fotona l\u00e4ngst ner i inl\u00e4gget.&nbsp;<\/p>\n<p><strong>Hjortf\u00e4rs \u00e4r mycket gott och kan anv\u00e4ndas till m\u00e5nga goda r\u00e4tter. H\u00e4r \u00e4r det en slags k\u00f6ttf\u00e4rss\u00e5s p\u00e5 hjortf\u00e4rs med rotfrukter, tomatpur\u00e9, fond och lite gr\u00e4dde. Om man vill f\u00e5 en h\u00f6stk\u00e4nsla tills\u00e4tter man \u00e4ven svamp, d\u00e5 blir det h\u00f6stf\u00e4rss\u00e5s. <\/strong><\/p>\n<p><strong>Servera med spaghetti eller annan pasta eller med ris samt n\u00e5gon h\u00e4rlig gr\u00f6nsak och\/eller sallad.&nbsp;<\/strong><\/p>\n<p><em><strong>Du beh\u00f6ver till 4 personer:&nbsp;<\/strong><\/em><\/p>\n<p>500 gram hjortf\u00e4rs<\/p>\n<p>olja och en sm\u00f6rklick till stekning<\/p>\n<p>2 vitl\u00f6ksklyftor, skalade och finhackade eller mosade<\/p>\n<p>2 schalottenl\u00f6kar eller 1 gul l\u00f6k, skalade och hackade<\/p>\n<p>1-2 mor\u00f6tter (beroende p\u00e5 hur stora de \u00e4r), skalade och grovstrimlade eller skurna i sm\u00e5 t\u00e4rningar (mire poix) eller strimlor (julienne)<\/p>\n<p>100 gram rotselleri, skalad och skuren p\u00e5 samma s\u00e4tt som moroten<\/p>\n<p>4 msk tomatpur\u00e9 av god kvalitet med fyllig smak<\/p>\n<p>f\u00e4rsk eller torkad timjan<\/p>\n<p>mejram eller k\u00f6rvel<\/p>\n<p>g\u00e4rna lite rosmarin<\/p>\n<p>svart- och vitpeppar, g\u00e4rna nymalen<\/p>\n<p>ev. 1\/2 tsk viltkrydda<\/p>\n<p>1\/2 &#8211; 1 msk k\u00f6tt-, vilt- eller kalvfond p\u00e5 flaska<\/p>\n<p>n\u00e5gra droppar soja (jag anv\u00e4nder alltid helst Kikkoman)<\/p>\n<p>ev. salt men smaka av eftersom fonden och sojan antagligen r\u00e4cker<\/p>\n<p>1 dl gr\u00e4dde<\/p>\n<p>pasta eller ris till servering samt gr\u00f6nsaker och ev. \u00e4ven sallad<\/p>\n<p><strong><em>G\u00f6r s\u00e5 h\u00e4r:&nbsp;<\/em><\/strong><\/p>\n<p>Fr\u00e4s l\u00f6ken p\u00e5 medelh\u00f6g v\u00e4rme s\u00e5 den blir mjuk utan att ta f\u00e4rg. Tills\u00e4tt vitl\u00f6ken mot slutet av stekningen. Antingen steker du f\u00e4rsen i l\u00f6ken eller s\u00e5 v\u00e4ljer du att lyfta upp l\u00f6kblandningen och l\u00e4gga p\u00e5 ett fat s\u00e5 l\u00e4nge medan du fr\u00e4ser f\u00e4rsen. Blanda sedan med l\u00f6ken, tills\u00e4tt kryddor och tomatpur\u00e9 och l\u00e5t fr\u00e4sa ett tag innan du tills\u00e4tter fond. L\u00e5t puttra ett tag, tills\u00e4tt ev. \u00e4ven lite vatten s\u00e5 det inte blir f\u00f6r torrt. Tills\u00e4tt sist gr\u00e4dden, l\u00e5t puttra ihop, smaka av med soja, \u00f6rter, peppar och ev. salt. Koka pastan eller riset och de gr\u00f6nsaker du valt att servera till medan s\u00e5sen f\u00e5r puttra p\u00e5 l\u00e5g v\u00e4rme s\u00e5 att smakerna blandas.
