Man kan snabbt koka sellerin men det blir \u00e4nnu godare om man bakar sellerin i ugnen.  <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fransm\u00e4nnen g\u00f6r ju g\u00e4rna olika sorters gr\u00f6nsakspur\u00e9er s\u00e5som jord\u00e4rtskocks-, morots- och just selleri- dito och jag har l\u00e4st p\u00e5 bland franska recept och funnit att de ofta, inte alltid, kokar sin selleri i mj\u00f6lk. I Sverige s\u00e4ger en del recept att den ska koka i gr\u00e4dde, men jag tycker inte det blir s\u00e5 bra med n\u00e5got av de h\u00e4r kokmetoderna. Denna selleripur\u00e9 som serverades till hjortfil\u00e9 inneh\u00f6ll p\u00e4ron, brynt sm\u00f6r och grillad citron. <\/figcaption><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>Du&nbsp;beh\u00f6ver&nbsp;till&nbsp;4&nbsp;personer:&nbsp;<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1-2 rotsellerihuvuden<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2-3 schalottenl\u00f6kar, skalade och finhackade<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">en rej\u00e4l klick sm\u00f6r att steka l\u00f6ken i<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">lite av kokvattnet<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">ca 1\/2 &#8211; 1 dl gr\u00e4dde (jag anv\u00e4nder Valios laktosfria) &#8211; man kan utesluta gr\u00e4dden och d\u00e5 ta lite mer sm\u00f6r och en skv\u00e4tt av kokvattnet<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">n\u00e5gra klickar rumsvarmt sm\u00f6r till pur\u00e9n n\u00e4r den mixas<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">vitpeppar<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00f6rtsalt eller tryffelsalt beroende p\u00e5 vad du ska servera pur\u00e9n till<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>G\u00f6r&nbsp;s\u00e5&nbsp;h\u00e4r:<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Om du vill koka sellerin: skala den och sk\u00e4r i kuber. Annars l\u00e4gger du in den tv\u00e4ttade rotsellerin hel med skal och allt i ugnen som du v\u00e4rmt till ca 175 grader. L\u00e5t rotsellerin baka i uppemot tv\u00e5 timmar tills den h\u00e4r helt mjuk rakt igenom. Skala den sedan och sk\u00e4r i bitar. Om du har kokat sellerin i vatten med salt eller kanske en t\u00e4rning gr\u00f6nsaksbuljong h\u00e4ller du av de mjuka t\u00e4rningarna, men sparar en del av kokvattnet att sp\u00e4da med n\u00e4r du mixar pur\u00e9n. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Under tiden steker du schalottenl\u00f6ken i en rej\u00e4l klick sm\u00f6r p\u00e5 medell\u00e5g v\u00e4rme tills den \u00e4r helt mjuk och glansig. L\u00e4gg den stekta schalottenl\u00f6ken med sellerin i mixer, tills\u00e4tt gr\u00e4dde och mixa. Sp\u00e4d eventuellt med lite kokvatten eller mer gr\u00e4dde, l\u00e4gg \u00e4ven i en rej\u00e4l klick sm\u00f6r och krydda med \u00f6rtsalt och peppar. Mixa till en sl\u00e4t pur\u00e9, mousse, cr\u00e8me och smaka av.
