1 tsk viltkrydda (finns att k\u00f6pa f\u00e4rdig, tag annars enb\u00e4r, lagerblad, peppar, timjan och salt) <\/p>\n\n\n\n<p>1 hel vitl\u00f6ksklyfta, skalad och skuren p\u00e5 l\u00e4ngden<\/p>\n\n\n\n<p>n\u00e5gra kvistar f\u00e4rsk timjan och\/eller rosmarin<\/p>\n\n\n\n<p>olja till stekning<\/p>\n\n\n\n<p>en rej\u00e4l klick sm\u00f6r till stekning &#8211; och sedan en till att \u00f6sa k\u00f6ttet med<\/p>\n\n\n\n<p><em>Till&nbsp;s\u00e5sen:&nbsp;<\/em><\/p>\n\n\n\n<p>2 msk gin<\/p>\n\n\n\n<p>1 litet paket f\u00e4rdig kalvfond eller 1-2 msk fr\u00e5n flaska &#8211; om du inte g\u00f6r den sj\u00e4lv fr\u00e5n grunden..:) <\/p>\n\n\n\n<p>2-3 dl gr\u00e4dde (jag anv\u00e4nder g\u00e4rna Valios laktosfria gr\u00e4dde)<\/p>\n\n\n\n<p>1 tsk enb\u00e4r, krossade i morteln<\/p>\n\n\n\n<p>1\/2 tsk viltkrydda eller samma substitut som ovan<\/p>\n\n\n\n<p>1\/2 tsk gr\u00f6npeppar<\/p>\n\n\n\n<p>svartpeppar, nymalen eller nymortlad<\/p>\n\n\n\n<p>g\u00e4rna \u00e4ven vitpeppar<\/p>\n\n\n\n<p>n\u00e5gra droppar soja, helst Kikkoman (smaka av &#8211; jag flamberade skyn med gin<\/figcaption><\/figure>\n\n\n\n<p><em><strong>G\u00f6r&nbsp;s\u00e5&nbsp;h\u00e4r:<\/strong><\/em><strong><\/strong><\/p>\n\n\n\n<p>Putsa hjortfil\u00e9erna s\u00e5 de \u00e4r fina och utan hinnor och senor. Se till att de \u00e4r rumstempererade n\u00e4r du steker dem. Krydda med peppar, viltkrydda, enb\u00e4r och salt eller den kryddblandning du g\u00f6r. Stek dem i en blandning av olja och sm\u00f6r, l\u00e4gg f\u00f6rst i vitl\u00f6kshalvorna och \u00f6rtkryddorna, l\u00e4gg i k\u00f6ttet n\u00e4r sm\u00f6ret slutat fr\u00e4sa &#8211; d\u00e5 \u00e4r pannan varm nog. V\u00e4nd k\u00f6ttet, drag ner v\u00e4rmen en aning och l\u00e4gg i en sm\u00f6rklick till. Se till att k\u00f6ttet f\u00e5r fin yta &#8211; du steker p\u00e5 ganska h\u00f6g v\u00e4rme. \u00d6s hela tiden k\u00f6ttet med sm\u00f6ret som f\u00e5tt h\u00e4rlig smak av \u00f6rterna och vitl\u00f6ken. Lyft ur k\u00f6ttet, h\u00e4ll i krossade enb\u00e4r och gin och t\u00e4nd p\u00e5 med en t\u00e4ndsticka men se till att du inte l\u00e4ngre st\u00e5r under en spisfl\u00e4kt (som kan ant\u00e4ndas d\u00e5 den ofta har fett och damm samlad i sig). L\u00e5t brinna ur. H\u00e4ll p\u00e5 gr\u00e4dde och fond, l\u00e5t puttra ihop. Tills\u00e4tt \u00e4ven peppar och lite mer enb\u00e4r. Sjud s\u00e5sen, n\u00e4r s\u00e5sen b\u00f6rjat tjockna efter 5-10 minuter smakar du av med soja och kanske mer kryddor. Jag gillar n\u00e4r s\u00e5sen f\u00e5r st\u00e5 och puttra uppemot en halvtimme f\u00f6r att f\u00e5 riktigt fina smaker och bli naturligt tjock utan redning. <\/p>\n\n\n\n<p>Under tiden steker du k\u00f6ttet klart i ugnen som du har p\u00e5 70-90 grader, se till att du har en bra termometer instucken i mitten p\u00e5 en k\u00f6ttbit, men se till att det inte \u00e4r den tjockaste biten f\u00f6r d\u00e5 blir de mindre bitarna l\u00e4tt torra. Jag tycker om n\u00e4r innertemperaturen \u00e4r 57 grader n\u00e4r jag tar ut k\u00f6ttet, eftersom v\u00e4rmen sedan stiger lite till n\u00e4r k\u00f6ttet vilar.
