Som vanligt s\u00e4gs det att man inte ska \u00e4ta s\u00e5 sent, men hos oss kan det ofta bli mer \u00e5t spanska middagstider \u00e4n svenska. Fil\u00e9n har stekts med den ayurvediska immunfr\u00e4mjande kryddblandningen som \u00e4ven skulle kunna kallas antiflammatorisk &#8211; den \u00e4r hur som helst mycket god och aromatisk. <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>F\u00f6r den som vill undvika vitl\u00f6k \u00e4r den h\u00e4r kryddblandningen utm\u00e4rkt, d\u00e5 den med sin h\u00f6ga andel f\u00e4nk\u00e5lsfr\u00f6n \u00e4r lugnande f\u00f6r magen och samtidigt smakrik s\u00e5 man kan hoppa \u00f6ver vitl\u00f6ken. Jag serverar g\u00e4rna det stekta kalkonk\u00f6ttet med en s\u00e5s p\u00e5 samma kryddblandning som v\u00e4rmts i klarat sm\u00f6r och blandas med rikligt med pressad citron &#8211; det blir otroligt gott och fr\u00e4scht. Gnid in dem med kryddblandningen, salta och peppra. L\u00e5t dem st\u00e5 tills det \u00e4r dags att steka dem. Under tiden g\u00f6r du de tillbeh\u00f6r du valt &#8211; koka ris, gr\u00f6nsaker&#8230; <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>S\u00e5&nbsp;h\u00e4r&nbsp;g\u00f6r&nbsp;du&nbsp;s\u00e5sen:&nbsp;<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sm\u00e4lt sm\u00f6ret i en tjockbottnad kastrull, l\u00e5t det forts\u00e4tta att puttra tills mj\u00f6lkresterna lagt sig p\u00e5 botten och b\u00f6rjat stelna. Du har d\u00e5 f\u00e5tt klarat sm\u00f6r. H\u00e4ll av genom en finmaskig sil och l\u00e5t det mj\u00f6lkiga och de fasta resterna vara kvar, ta bara med det klara fina sm\u00f6ret. H\u00e4ll det i en rengjord kastrull, s\u00e4tt den p\u00e5 v\u00e4rmen och l\u00e5t kryddorna v\u00e4rma med ett tag innan du tills\u00e4tter citronsaft och smakar av med salt. R\u00f6r om ordentligt varje g\u00e5ng du ska smaka av och n\u00e4r du serverar s\u00e5 du f\u00e5r med b\u00e5de sm\u00f6r och citron. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Stek kalkonbr\u00f6sten i olja som du v\u00e4rmt till ganska h\u00f6g temperatur, n\u00e4r de f\u00e5tt fin stekyta v\u00e4nder du och ser till att \u00e4ven andra sidan har fin stekyta. L\u00e4gg fil\u00e9erna p\u00e5 ett ugnsfast fat och st\u00e4ll in det i ugnen, helst med en ugnstermometer. L\u00e5t de stekas f\u00e4rdigt i ugnen som du v\u00e4rmt till ca 170 grader tills innertemperaturen \u00e4r 67 grader, l\u00e5t d\u00e4refter vila tills innertemperaturen stigit till lite drygt 70 grader.
