F\u00e4nk\u00e5len stektes i sm\u00f6r och olja och fick smaktillskott av s\u00e5v\u00e4l den h\u00e4r vinkokta l\u00f6ken som malda f\u00e4nk\u00e5lsfr\u00f6n och vitpeppar. Pastan ska kokas i gott om rikligt saltat vatten f\u00f6r b\u00e4sta italienska resultat. Medan pastavattnet kokar upp fr\u00e4ser du din strimlade f\u00e4nk\u00e5l med schalottenl\u00f6ken i sm\u00f6r och olja tills den \u00e4r ganska mjuk. Tills\u00e4tt vinet och l\u00e5t puttra ihop. Smaks\u00e4tt med citronskal, peppar och en aning salt (t\u00e4nk p\u00e5 att osten ocks\u00e5 \u00e4r salt). Vid det h\u00e4r laget \u00e4r antagligen pastan f\u00e4rdigkokt, perfekt al dente med en k\u00e4rna av tuggmotst\u00e5nd.
