St\u00e5r det tryffel p\u00e5 en r\u00e4tt p\u00e5 menyn dras jag ob\u00f6nh\u00f6rligt till den som ett nattfly till ljuset. Numera kan man hitta en underbar liten burk som inneh\u00e5ller bara mosad svart tryffel i olivolja. Den hittade jag p\u00e5 MatHem och gl\u00e4der mig mycket \u00e5t den i mitt k\u00f6k. <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>H\u00e4r har en del av den f\u00e5tt slinka ner i en h\u00e4rligt kr\u00e4mig potatisgrat\u00e4ng, full av smak fr\u00e5n tryffeln. F\u00f6r extra mumsighet kan man g\u00e4rna anv\u00e4nda tryffelpecorino, som ju ocks\u00e5 ger en angen\u00e4m syra. Jag anv\u00e4nde emellertid en v\u00e4llagrad parmesan. <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>I st\u00e4llet f\u00f6r all vitl\u00f6k jag brukar \u00e4lska att ha i en vanlig potatisgrat\u00e4ng ville jag h\u00e4r tona ner vitl\u00f6ken till f\u00f6rm\u00e5n f\u00f6r tryffeln. D\u00e4rf\u00f6r har jag bara gnidit formen med snittytan av en halv vitl\u00f6k och sedan l\u00e5tit de tv\u00e5 vitl\u00f6kshalvorna f\u00e5 sjuda med i gr\u00e4dden. Servera med k\u00f6tt, kyckling eller fisk &#8211; eller njut bara som den \u00e4r, g\u00e4rna med en fr\u00e4sch sallad till. F\u00f6r recept p\u00e5 r\u00e4tten s\u00e5 som jag presenterade den h\u00e4nvisar jag till eget inl\u00e4gg. <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>Du beh\u00f6ver f\u00f6r cirka 4-6 personer: <\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">ca 10 potatisar, skalade och tunt skivade (jag anv\u00e4nder en hush\u00e5llsassistent med bladet f\u00f6r att skiva gr\u00f6nsaker)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 vitl\u00f6ksklyfta, skalad och skuren p\u00e5 l\u00e4ngden<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">ca 3 dl gr\u00e4dde (jag anv\u00e4nder g\u00e4rna Valios laktosfria gr\u00e4dde som dessutom \u00e4r h\u00e4rligt kr\u00e4mig och god i smaken)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">salt och peppar, men t\u00e4nk p\u00e5 att \u00e4ven osten ger s\u00e4lta<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">n\u00e5gra skedar mald tryffel i olivolja (se bilden p\u00e5 burken jag hittade)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2-3 dl finriven v\u00e4llagrad parmesan, tryffelpecorino eller gruy\u00e8re<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>G\u00f6r s\u00e5 h\u00e4r: <\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gnid den ugnsform du valt f\u00f6r grat\u00e4ngen med snittytan p\u00e5 en uppskuren vitl\u00f6ksklyfta. Sm\u00f6rj formen med sm\u00f6r och gnid den g\u00e4rna en sv\u00e4ng till. L\u00e4gg de tv\u00e5 halvorna av vitl\u00f6ksklyftan i en kastrull tillsammans med gr\u00e4dden och tills\u00e4tt n\u00e5gra skedar tryffelcr\u00e8me. Blanda runt. Krydda med peppar och lite salt. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Skiva potatisen tunt, l\u00e4gg den direkt i gr\u00e4dden och st\u00e4ll kastrullen \u00f6ver medelh\u00f6g v\u00e4rme. R\u00f6r om s\u00e5 att all potatis f\u00e5r gr\u00e4ddblandningen p\u00e5 sig samtidigt som det hela tjocknar en aning. H\u00e4ll upp h\u00e4lften av potatisen i din ugnsform, bred ut och f\u00f6rdela drygt h\u00e4lften av osten \u00f6ver, h\u00e4ll p\u00e5 resten av potatisen, bred ut den och str\u00f6 resten av osten \u00f6ver. Peppra lite och l\u00e4gg eventuellt p\u00e5 n\u00e5gra sm\u00f6rklickar eller hyvlat sm\u00f6r \u00f6ver grat\u00e4ngen innan den \u00e5ker in i ugnen. Baka den i 150-170 grader i \u00e5tminstone en timme s\u00e5 att potatisen blir helt mjuk och absorberar mycket av v\u00e4tskan. Du ska ha en h\u00e4rlig kr\u00e4mig skapelse. Om den tar f\u00f6r mycket f\u00e4rg l\u00e4gger du ett bakpl\u00e5tspapper eller folie \u00f6ver, utan att det fastnar i ostt\u00e4cket. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Servera direkt, dekorera g\u00e4rna med lite bladpersilja.
