Vi gjorde en mumsig beurre blanc, vilket ju \u00e4r lite pyssligare. Recept p\u00e5 den s\u00e5sen hittar du i eget inl\u00e4gg h\u00e4r bredvid. Men som sagt: brynt sm\u00f6r med pressad citron i, g\u00e4rna s\u00e5dan du f\u00f6rst &#8221;grillat&#8221; i stekpanna \u00e4r minst lika gott &#8211; och g\u00e5r fort! <\/p>\n\n\n\n<figure class=\"wp-block-image is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/files.katinkaskitchen.com\/2019\/03\/fullsizeoutput_24fa-768x1024.jpeg\" alt=\"\" class=\"wp-image-30663\" width=\"384\" height=\"512\" srcset=\"https:\/\/files.katinkaskitchen.com\/2019\/03\/fullsizeoutput_24fa-768x1024.jpeg 768w, https:\/\/files.katinkaskitchen.com\/2019\/03\/fullsizeoutput_24fa-113x150.jpeg 113w, https:\/\/files.katinkaskitchen.com\/2019\/03\/fullsizeoutput_24fa-225x300.jpeg 225w\" sizes=\"auto, (max-width: 384px) 100vw, 384px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>Du beh\u00f6vs f\u00f6r 4 personer:<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4 bitar lax \u00e0 150-200 gram, beroende p\u00e5 hur hungriga ni \u00e4r<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">olja till formen<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2-4 citroner<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">sm\u00f6r och olivolja att sm\u00f6rja formen med<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">f\u00e4rsk gr\u00f6n sparris<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">salt och peppar och g\u00e4rna \u00f6rtkryddor<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Till citronsm\u00f6rs\u00e5s: <\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">ca 75 gram sm\u00f6r<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">saften fr\u00e5n pressade citroner, g\u00e4rna &#8221;grillade&#8221; &#8211; se nedan<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">ev. lite salt (smaka av!)<\/p>\n\n\n\n<figure class=\"wp-block-image is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/files.katinkaskitchen.com\/2019\/03\/fullsizeoutput_24f7-1024x768.jpeg\" alt=\"\" class=\"wp-image-30662\" width=\"512\" height=\"384\" srcset=\"https:\/\/files.katinkaskitchen.com\/2019\/03\/fullsizeoutput_24f7-1024x768.jpeg 1024w, https:\/\/files.katinkaskitchen.com\/2019\/03\/fullsizeoutput_24f7-150x113.jpeg 150w, https:\/\/files.katinkaskitchen.com\/2019\/03\/fullsizeoutput_24f7-300x225.jpeg 300w, https:\/\/files.katinkaskitchen.com\/2019\/03\/fullsizeoutput_24f7-768x576.jpeg 768w\" sizes=\"auto, (max-width: 512px) 100vw, 512px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>G\u00f6r s\u00e5 h\u00e4r: <\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">B\u00f6rja med att &#8221;grilla&#8221; citronerna i stekpanna. L\u00e4gg dem med snittytan ner och v\u00e4rm dem p\u00e5 medelv\u00e4rme tills de \u00e4r helt mjuka. Det g\u00f6r inget om de blir lite m\u00f6rka i snittytan, men det \u00e4r ju bra om de f\u00f6rblir ganska bleka. L\u00e4gg laxen i en smord ugnsfast form. Krydda den med salt, peppar och g\u00e4rna \u00f6rter eller om du har n\u00e5gon trevlig kryddblandning.  Pressa lite av den grillade citronen \u00f6ver och ringla \u00f6ver olivolja precis innan de ska in i ugnen. L\u00e5t dem st\u00e5 \u00e5t sidan s\u00e5 l\u00e4nge. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Skala sparrisarna s\u00e5 att det tunna yttersta skalet f\u00f6rsvinner, jag g\u00f6r det med en potatisskalare som kan ta tunna skal. En del anv\u00e4nder den gr\u00f6na sparrisen som den \u00e4r, men jag f\u00f6redrar att den skalas f\u00f6r att bli av med en del av tr\u00e5kigheten. L\u00e4gg dina sparrisar i en ugnsform eller p\u00e5 en ugnspl\u00e5t. Ringla \u00f6ver lite olivolja och salta. Baka sparrisarna i ugnen p\u00e5 ca 170 grader i ca 20 minuter. De sista tio minuterna kan du dra ner v\u00e4rmen till 150 och st\u00e4lla in fisken ocks\u00e5 om du har varmluftsugn. Annars k\u00f6r du klart sparrisen och bakar fisken i 150 grader ca 20 minuter tills den ser bra ut eller har en innertemperatur p\u00e5 max 44 grader. Jag gillar n\u00e4r laxen \u00e4r lite &#8221;sashimi-ig&#8221; det vill s\u00e4ga n\u00e4stan r\u00e5 i mitten. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Under tiden som sparris och lax ugnsbakas sm\u00e4lter du sm\u00f6ret s\u00e5 det b\u00f6rjar puttra och dofta n\u00f6tigt. H\u00e4ll av det klara sm\u00f6ret i en annan kastrull s\u00e5 du inte f\u00e5r med den fasta mj\u00f6lkresten i botten av kastrullen. Pressa i grillad citron, smaka av s\u00e5 du har bra balans.
