Kryddsm\u00f6r p\u00e5 brynt sm\u00f6r och schalottenl\u00f6k till det nygrillade \u00e4r ytterligare en h\u00f6jdare. Eller tills\u00e4tt pressad citron och kanske en skv\u00e4tt soja och servera till fisk eller kyckling.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Men hur g\u00f6r man d\u00e5 f\u00f6r att framg\u00e5ngsrikt bryna sm\u00f6r? F\u00f6rsta g\u00e5ngerna jag pr\u00f6vade skv\u00e4tte det hoppl\u00f6st \u00f6ver hela spisen och slutade med att sm\u00f6ret br\u00e4ndes och blev beskt. Mycket av sm\u00f6ret kommer att f\u00f6r\u00e5ngas eller fastna i form av mj\u00f6lkrester i botten, det \u00e4r de som br\u00e4nns v\u00e4ldigt l\u00e4tt men \u00e4ven de som ger sin delikata smak n\u00e4r du stannar processen i tid.  Snurra f\u00f6rsiktigt kastrullen d\u00e5 och d\u00e5, l\u00e5t den f\u00f6r det mesta st\u00e5 p\u00e5 plattan &#8211; f\u00f6rst kommer det skv\u00e4tta en del men efter ett tag lugnar det sig och det blir fullt av bubblor i sm\u00f6ret som sakta minskar i storlek tills det n\u00e4stan tystnar. D\u00e5 st\u00e5r du och passar och lyfter av kastrullen direkt n\u00e4r du k\u00e4nner den ljuvliga n\u00f6tiga smaken och ser att sm\u00f6ret f\u00e5r en vacker gyllenbrun f\u00e4rg men som sagt absolut inte blir br\u00e4nt.<\/strong> <strong>L\u00e5t sm\u00f6ret st\u00e5 ett tag s\u00e5 skummet l\u00e4gger sig. H\u00e4ll av det klarade brynta sm\u00f6ret<\/strong> <strong>f\u00f6rsiktigt, s\u00e5 inga av de fasta resterna kommer med. Jag brukar anv\u00e4nda en liten finmaskig sil som f\u00e5ngar det mesta &#8211; det finaste smulet kan vara sv\u00e5rt att bli av med. Nu \u00e4r ditt brynta sm\u00f6r klart att anv\u00e4nda. Om du beh\u00f6ver v\u00e4rmer du upp det lite innan servering. Det \u00e4r ocks\u00e5 gott att blanda i sojas\u00e5s, citron, \u00f6rter, indiska kryddor eller l\u00e5ta det stelna f\u00f6r att sedan vispa upp det till ett delikat sm\u00f6r.
