Cocktailtomater bakas i ugn i olivolja med vitl\u00f6k, kapris och oliver samt lite \u00f6rter &#8211; helt otroligt enkelt och makal\u00f6st gott. De h\u00e4r gr\u00f6nsakerna kan man sedan anv\u00e4nda som tillbeh\u00f6r till fisk, kyckling, k\u00f6tt, blandat med pasta eller i en omelett. Beroende p\u00e5 hur salta du sedan vill ha dem l\u00e5ter du dem antingen sk\u00f6ljas flera g\u00e5nger och ligga l\u00e4ngre i bl\u00f6t i olika omg\u00e5ngar kallt vatten eller k\u00f6r bara n\u00e5gra varv s\u00e5 en del s\u00e4lta \u00e4r kvar. Smaka p\u00e5 en kapris, det \u00e4r gott med en viss s\u00e4lta kvar i den h\u00e4r r\u00e4tten. H\u00e4ll av lagen fr\u00e5n oliverna. L\u00e4gg zucchinibitarna i botten p\u00e5 en ugnsfast form. L\u00e4gg p\u00e5 tomaterna, h\u00e4ll p\u00e5 oliverna och kaprisen. Tryck ner vitl\u00f6karna och str\u00f6 \u00f6ver \u00f6rter, salt och peppar samt eventuell lite chili. Ringla rikligt med olivolja \u00f6ver.
