Man g\u00f6r som en mandelmassa fast lite mindre s\u00f6t, och formar sm\u00e5 kakor som gr\u00e4ddas. Min favoritvariant rullas i hela skalade mandlar av b\u00e4sta kvalitet, men i avsaknad av dem h\u00e4r hemma fick det bli en annan variant som rullas i florsocker. <\/strong><\/p>\n\n\n\n<p><strong>Kakorna kallas helt enkelt f\u00f6r &#8221;mandelmassa&#8221; p\u00e5 italienska: pasta di mandorle. Tills\u00e4tt \u00e4ggvita, akaciahonung och rom och r\u00f6r samman till en pasta. B\u00f6rja med en gaffel eller sked, avsluta sedan g\u00e4rna med att blanda med h\u00e4nderna p\u00e5 \u00e4kta italienskt man\u00e9r. Om blandningen blir f\u00f6r h\u00e5rd tills\u00e4tter du mer \u00e4ggvita, om den blir f\u00f6r l\u00f6s tills\u00e4tter du mer mandelmj\u00f6l. N\u00e4r du f\u00e5tt ihop pastan till en fast deg rullar du den i kulor om ca 25 gram styck. Rulla dem i siktat florsocker, l\u00e4gg dem p\u00e5 en pl\u00e5t med bakpl\u00e5tspapper och gr\u00e4dda i ugnen p\u00e5 175 grader i 10-12 minuter. De ska precis b\u00f6rja ta f\u00e4rg, men fortfarande mjuka inuti. L\u00e5t dem svalna p\u00e5 pl\u00e5ten, l\u00e4gg upp dem och servera.
