Jag k\u00f6pte ocks\u00e5 ett g\u00e4ng magiskt fina citroner och allt sl\u00e4pades hem i bagaget till Sverige. V\u00e4l hemma anv\u00e4ndes citronerna dels i den h\u00e4r r\u00e4tten med jord\u00e4rtskockorna och resten fick bli till en citronsorbet som du kan l\u00e4sa mer om i eget inl\u00e4gg. Det h\u00e4r \u00e4r Italien, k\u00e4rlek och magi p\u00e5 en tallrik tycker jag<\/strong> <strong>och nu n\u00e4r kron\u00e4rtskockorna \u00e4r i s\u00e4song anv\u00e4nder du med f\u00f6rdel de f\u00f6rsta sp\u00e4da skockorna till den h\u00e4r r\u00e4tten. <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Om kron\u00e4rtskockorna \u00e4r v\u00e4ldigt sm\u00e5 och mj\u00e4lla kan du sk\u00e4ra upp dem i sm\u00e5 klyftor och koka och sedan anv\u00e4nda dem hela, annars kokar du dem f\u00f6rst i saltat vatten och plockar loss bladen och anv\u00e4nder bottnarna. \u00c4r de som mina lite mittemellan kan du sk\u00e4ra av den nedre k\u00f6ttigare biten av bladen och anv\u00e4nda dem tillsammans med bottnarna skurna i bitar. Koka sedan pastan i vattnet med rikligt med salt tills den \u00e4r al dente och blir klar precis n\u00e4r s\u00e5sen \u00e4r klar. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">G\u00f6r pastas\u00e5sen: fr\u00e4s vitl\u00f6k och schalottenl\u00f6k \u00f6ver medelh\u00f6g v\u00e4rme i rikligt med olivolja. N\u00e4r l\u00f6ken \u00e4r mjuk l\u00e4gger du i kron\u00e4rtskocksbottnarna skurna i bitar samt blad om du kan anv\u00e4nda dem. Tills\u00e4tt citronskal, salta och peppra och l\u00e5t sjuda ett litet tag bara s\u00e5 att smakerna blandas. Tills\u00e4tt citronsaft lite i taget &#8211; smaka av! N\u00e4r du saltar ska du t\u00e4nka p\u00e5 att parmesanen \u00e4ven ger s\u00e4lta. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">H\u00e4ll din nyavrunna pasta i pastas\u00e5sen, tills\u00e4tt parmesan och lite extra olivolja. Blanda runt och servera direkt med lite mer parmesanflagor och kanske n\u00e5gra kron\u00e4rtskocksblad som dekoration. Str\u00f6 g\u00e4rna lite sl\u00e4tbladiga persilja \u00f6ver.
