R\u00f6r om d\u00e5 och d\u00e5, alla smaker ska frig\u00f6ras. Tills\u00e4tt vitpeppar, timjan, rosmarin och lagerblad. L\u00e4gg i benen och t\u00e4ck med vatten. L\u00e5t sjuda p\u00e5 l\u00e5g v\u00e4rme, skumma d\u00e5 och d\u00e5. Fyll p\u00e5 vatten s\u00e5 att benen t\u00e4cks och l\u00e5t sjuda s\u00e5 h\u00e4r i 4 timmar. D\u00e5 silar du av fonden, sl\u00e4nger det urkokade och reducerar ner din smakrika fond till att bli \u00e4nnu smakrikare s\u00e5 att du har ca 1 1\/2 liter kvar. Smaka av s\u00e5 att du f\u00e5tt fram ett djup i smaken.
