Spara topparna till dekoration. Hyvla l\u00e5nga remsor av en sparris som du sedan sk\u00e4r i kortare remsor s\u00e5 de g\u00e5r att \u00e4ta med sked i soppan. De h\u00e4r topparna och remsorna ska du anv\u00e4nda till garnityr i soppan. <\/p>\n\n\n\n<p>Stek schalottenl\u00f6ken i sm\u00f6r \u00f6ver medell\u00e5g v\u00e4rme med lite salt tills den \u00e4r helt mjuk och glansig men inte blivit m\u00f6rk i f\u00e4rgen, d\u00e5 blir den besk. L\u00e5t sjuda tills sparrisen \u00e4r helt mjuk. <\/p>\n\n\n\n<p>Koka g\u00e4rna sparristopparna som du ska anv\u00e4nda till dekoration i en liten kastrull f\u00f6r sig. Strimlorna kan du f\u00f6rv\u00e4lla snabbt och sedan sk\u00f6lja i kallt vatten s\u00e5 de har en aning textur kvar. L\u00e4gg dem g\u00e4rna i lite citronjuice blandat med en aning olivolja och salt. Snurra kastrullen d\u00e5 och d\u00e5 men l\u00e5t det st\u00e5 och puttra i sin egen takt, det skv\u00e4tter antagligen ett tag och l\u00e5ter en del men lugnar sig senare d\u00e5 bubblorna blir mindre f\u00f6r att n\u00e4stan avta helt. D\u00e5 sprider sig en ljuvlig n\u00f6tig doft och du ser hur sm\u00f6ret b\u00f6rjar bli brunt i mitten &#8211; precis d\u00e5 tar du av sm\u00f6ret och l\u00e5ter det st\u00e5 ett tag s\u00e5 det lugnar sig och de brynta mj\u00f6lkresterna sjunker till botten. Spara g\u00e4rna n\u00e5gra vackra k\u00f6rvelblad till garneringen. <\/p>\n\n\n\n<p>Skiva kavringen riktigt tunt och l\u00e4gg dem p\u00e5 ett galler \u00f6ver en pl\u00e5t. Rosta skivorna i ugn som du v\u00e4rmt till 150-170 grader. De ska bli helt torra men inte br\u00e4nda. Om man vill kan man ist\u00e4llet smula kavringen eller sk\u00e4ra i sm\u00e5 tunna bitar eller kuber som man sedan steker i lite sm\u00f6r till krutonger. L\u00e5t rinna av p\u00e5 hush\u00e5llspapper f\u00f6r att bli av med \u00f6verfl\u00f6digt fett f\u00f6r att f\u00e5 en vacker uppl\u00e4ggning. St\u00e4ll br\u00f6ddekorationerna \u00e5t sidan s\u00e5 l\u00e4nge. De h\u00e4r kan sj\u00e4lvklart f\u00f6rberedas l\u00e5ng tid i f\u00f6rv\u00e4g, s\u00e4rskilt om du rostar i ugn utan fett &#8211; d\u00e5 h\u00e5ller de l\u00e4nge i burk med t\u00e4tt lock om de l\u00e4ggs ner n\u00e4r de \u00e4r helt avkylda.  <\/p>\n\n\n\n\n\n<p>H\u00e4ll av en del av buljongen men spara den till att sp\u00e4da med om det beh\u00f6vs, h\u00e4ll \u00e4ven i drygt h\u00e4lften av det brynta sm\u00f6ret och mixa sparrisen till en sl\u00e4t soppa. Sp\u00e4d eventuellt med mer buljong, men t\u00e4nk ocks\u00e5 p\u00e5 att du ska ha i en aning gr\u00e4dde. Det sm\u00f6r som blir \u00f6ver anv\u00e4nder du till att droppa eller ringla i sopptallrikarna vid garnering. <\/p>\n\n\n\n<p>Arrangera sparristoppar, kavring och strimlor vackert i tallrikarna med k\u00f6rvelblad, h\u00e4ll f\u00f6rsiktigt p\u00e5 soppa och droppa i brynt sm\u00f6r samt k\u00f6rvelolja. Om man vill kan man \u00e4ven toppa med lite forellrom f\u00f6r vacker f\u00e4rg och form.
