Putsa k\u00f6ttet fritt fr\u00e5n senor och hinnor. Dela eventuellt i bitar p\u00e5 15-20 cm som \u00e4r l\u00e4ttare att hantera och som f\u00e5r plats i ugnsformen du valt f\u00f6r att steka dem, om du t\u00e4nker laga dem i ugnen. Grilla s\u00e5 det f\u00e5r fin stekyta men utan att br\u00e4nnas! Det f\u00e5r inte heller grillas f\u00f6r l\u00e4nge, d\u00e5 blir det bara torrt.<\/p>\n<p>Om du ska steka k\u00f6ttet i ugn kan det vara en bra id\u00e9 att torka av k\u00f6ttet och steka det i stekpanna eller gryta i olja blandat med sm\u00f6r p\u00e5 h\u00f6g v\u00e4rme f\u00f6r att f\u00f6rsluta porerna och sedan l\u00e4gga det tillbaka i marinaden f\u00f6r att br\u00e4sera k\u00f6ttet i ugnen i 175 grader ca 20-30 minuter \u2013 k\u00e4nn p\u00e5 k\u00f6ttet s\u00e5 det inte blir f\u00f6r \u00f6verstekt. Jag tycker det \u00e4r b\u00e4st n\u00e4r det \u00e4r lite rosa bara precis i mitten, fortfarande har kvar sin saftighet men \u00e4nd\u00e5 \u00e4r n\u00e4stan genomstekt utan att vara torrt. T\u00e4nk p\u00e5 att k\u00f6ttet forts\u00e4tter att kokas i marinaden efter du tagit ut formen ur ugnen. L\u00e5t det svalna i marinaden. Ta upp k\u00f6ttet och sk\u00e4r det ett tag f\u00f6re servering.
