Men jag hamnade i st\u00e4llet i Paris. \ud83d\ude42 <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Jag valde att k\u00f6ra klassiskt med utg\u00e5ngspunkt i min mormors underbara k\u00f6ttbullar. Moset blev ett jord\u00e4rtskocksmos med en aning potatis och den inlagda gurkan blev l\u00e5nga gurk- och f\u00e4nk\u00e5lsstrimlor som marinerades i citron, salt och lite olivolja. <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Urs\u00e4kta avstavningen i rubriken &#8211; den kommer sig av att halva texten annars f\u00f6rsvinner i rutan p\u00e5 f\u00f6rsta sidan. \ud83d\ude42 <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">P\u00e5 klassiskt vis anv\u00e4nde jag blandf\u00e4rs p\u00e5 n\u00f6t och fl\u00e4sk. Vispa ihop \u00e4ggula och gr\u00e4dde helt l\u00e4tt och st\u00e4ll det \u00e5t sidan s\u00e5 l\u00e4nge. Skala l\u00f6ken och hacka den mycket fint, alternativt riv den p\u00e5 rivj\u00e4rn fast jag tycker smaken blir b\u00e4ttre n\u00e4r man g\u00f6r sig omaket att finhacka den f\u00f6r hand. Fr\u00e4s drygt h\u00e4lften av l\u00f6ken i sm\u00f6r \u00f6ver medell\u00e5g v\u00e4rme i stekpanna eller liten sauteuse tills den blir mjuk men inte tar f\u00e4rg. Detta g\u00f6r jag f\u00f6r att f\u00e5 en finare smakbild d\u00e4r s\u00f6tman av l\u00f6ken kommer fram mer. Om man vill kan man fr\u00e4sa all l\u00f6k. Blanda ihop f\u00e4rsen med den avsvalnade stekta l\u00f6ken, det bl\u00f6tlagda str\u00f6br\u00f6det, kryddor, eventuellt r\u00e5 finhackad l\u00f6k samt gr\u00e4dde och \u00e4ggula. Du ska f\u00e5 en fin smidig f\u00e4rs. Tills\u00e4tt eventuellt lite mer gr\u00e4dde eller en \u00e4ggula till om den verkar f\u00f6r fast och &#8221;k\u00f6ttig&#8221;. F\u00f6r att f\u00e5 goda k\u00f6ttbullar m\u00e5ste man f\u00e5 upp en luftighet vilket str\u00f6br\u00f6det och gr\u00e4dden ger med \u00e4ggulan. Provstek en k\u00f6ttbulle f\u00f6rst, i v\u00e4l upphettad panna. N\u00e4r du l\u00e4gger i sm\u00f6ret ska det ha tystnat innan du l\u00e4gger i k\u00f6ttbullarna. Stek inte p\u00e5 h\u00f6gsta v\u00e4rmen men heller inte f\u00f6r l\u00e5gt, s\u00e4rskilt i b\u00f6rjan \u00e4r det bra att de f\u00e5r en fin stekyta, sedan kan du eventuellt dra ner v\u00e4rmen en aning. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">N\u00e4r jag stekte mina k\u00f6ttbullar p\u00e5 den minst sagt minimala k\u00f6ksytan man har i slutkvalet i G\u00e4vle med bunkar p\u00e5 golvet och allm\u00e4nt kaos \u00e4ven om jag f\u00f6rs\u00f6kte h\u00e5lla lite ordning trillade mina provstekta k\u00f6ttbullar hj\u00e4lpl\u00f6st is\u00e4r&#8230; Det var bara att tills\u00e4tta lite mer \u00e4ggula och str\u00f6br\u00f6d, sedan blev de s\u00e5 fina s\u00e5. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">N\u00e4r du \u00e4r n\u00f6jd med smeten kan du st\u00e4lla den \u00e5t sidan medan du g\u00f6r gurksalladen och pur\u00e9n eller i vart fall p\u00e5b\u00f6rjar den. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Gurksalladen: <\/em>Skala och strimla gurkan med potatisskalare eller mandolin (fast d\u00e5 blir skivorna l\u00e4tt bredare). Sk\u00f6lj och dela f\u00e4nk\u00e5len p\u00e5 mitten, dela den eventuellt en g\u00e5ng till beroende p\u00e5 hur stor den \u00e4r. Skiva den mycket tunt, g\u00e4rna p\u00e5 mandolin. L\u00e4gg f\u00e4nk\u00e5l i en sk\u00e5l. Salta och pressa citron \u00f6ver, droppa f\u00f6rsiktigt olivolja \u00f6ver. Blanda runt, g\u00e4rna med rena h\u00e4nder s\u00e5 att du n\u00e4stan kn\u00e5dar f\u00e4nk\u00e5len, tills\u00e4tt sedan gurkstrimlorna och blanda runt. Smaka av s\u00e4ltan och syran och tills\u00e4tt lite ros\u00e9peppar som du krossar med fingrarna eller krossar l\u00e4tt i mortel. Smaka av. St\u00e4ll \u00e5t sidan s\u00e5 l\u00e4nge.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Jord\u00e4rtskockspur\u00e9n:<\/em> Skala jord\u00e4rtskockorna och potatisen. Sk\u00e4r i bitar s\u00e5 g\u00e5r det fortare att koka. Koka i saltat vatten tills det \u00e4r helt mjukt, n\u00e4stan s\u00f6nderkokt. Spara lite av kokvattnet till pur\u00e9n. Bryn sm\u00f6ret och l\u00e5t det svalna en aning. Mixa jord\u00e4rtskockor och potatis med sm\u00f6ret, en sked av kokvattnet och lite gr\u00e4dde, krydda med salt och vitpeppar. Smaka av s\u00e5 du f\u00e5r fin s\u00e4lta och smak. Man kan g\u00e4rna tills\u00e4tta n\u00e5gra sm\u00e5 droppar citron f\u00f6r att lyfta smaken. N\u00e4r du \u00e4r n\u00f6jd med smak och konsistens h\u00e4ller du tillbaka pur\u00e9n i en ren kastrull och h\u00e5ller den varm p\u00e5 l\u00e5g v\u00e4rme. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Stek k\u00f6ttbullarna i en blandning av sm\u00f6r och olja, f\u00f6r att sm\u00f6ret inte ska bli br\u00e4nt d\u00e5 mj\u00f6lkresterna f\u00e4lls ut vid lite h\u00f6gre temperaturer. Om du vill k\u00f6ra mer safe klarar du sm\u00f6ret f\u00f6rst, bryner det i en kastrull tills det slutar puttra och det b\u00f6rjar dofta ljuvligt. L\u00e5t det st\u00e5 ett tag och sila sedan av det klara sm\u00f6ret fr\u00e5n de fasta mj\u00f6lkpartiklarna.
